This is one of my coolest citrus trees in the garden! It’s called “Centennial Variegated Kumquat” the leaves has a striking variegated pattern that’s gorgeous on its own but the coolest part in my opinion are the fruits! They look like tiny watermelons 🍉 This is the first time this tree has produced fruit so I’m super excited to try it from what I’ve heard the fruits turn fully orange when ripe just like other kumquat varieties so stay tuned for the future harvest and taste test 😋

Huge Ackee harvest today from the garden 🪴

Ackee (Blighia sapida) is a tropical fruit tree native to West Africa but widely associated with Jamaica, where it’s a staple in the national dish, ackee and saltfish. The fruit has bright red pods that split open when ripe, revealing creamy, yellow flesh and black seeds. Only the yellow flesh is edible; the seeds and unripe fruit contain toxins that can cause serious illness if eaten. Ackee trees grow best in warm, humid climates, and the fruit is harvested when fully mature and naturally opened.

Have you ever tried Snake Fruit also known as Salak?

This tropical fruit gets its name from its skin that looks similar to a snake! After peeling off the skin you eat the flesh around the seeds. The flavor is sweet, sour, and tangy and has a unique aftertaste that I can’t quite explain or even decide if I like 😂

These Jackfruit Rangoons are one of my favorite appetizers to make! They are sweet and savory and absolutely delicious!

Ingredients (Makes ~20 wontons)

Filling:
• ½ cup ripe jackfruit, finely chopped or mashed
• 4 oz (½ block) cream cheese, softened
• 1 tsp lime zest
• Optional: pinch of chili flakes or minced jalapeño for a sweet-heat combo
• Pinch of salt, to taste

Wrappers:
• ~20 wonton wrappers
• Small bowl of water for sealing edges

For Cooking:
• Neutral oil for frying (canola, peanut, etc.)
• OR oil spray for air frying



Instructions

1. Make the Filling:
• In a bowl, mix together the cream cheese, chopped jackfruit, lime zest, and any optional flavorings (chili, salt, etc.).
• Taste and adjust sweetness or spice to your liking.

2. Assemble Wontons:
• Place a wonton wrapper on a clean surface.
• Spoon ~1 tsp of filling into the center.
• Dip your finger in water and moisten the edges of the wrapper.
• Fold into a triangle or bring all 4 corners up to make a money bag shape, pressing tightly to seal.
• Keep the wrappers you’re not using under a damp cloth so they don’t dry out.

3. Cook:

To Deep Fry:
• Heat oil to 350°F (175°C).
• Fry wontons in small batches for 1–2 minutes per side, or until golden brown.
• Drain on paper towels and sprinkle lightly with salt.

To Air Fry:
• Lightly spray both sides with oil.
• Air fry at 375°F (190°C) for 6–8 minutes, flipping halfway through, until crisp and golden.

The Florida Keys is a wonderful place to vacation, however if you do choose to come here be sure to obey the speed limits. This helps keep the local unique wildlife safe such as this Key Deer (a much smaller subspecies of white-tail deer only around 60-100lbs in weight) only found down here in the Florida Keys 🫶

Together we can all protect these incredible animals and enjoy watching them from a safe distance 🤙
