Harvested my first ever Ponderosa Lemons today and made the best lemonade 🍋 So delicious 😋

🍋 Ponderosa Lemonade Recipe 🍋

Ingredients:
• 1 cup fresh Ponderosa lemon juice
• 1 cup sugar
• 5 cups cold water
• Ice, for serving

Instructions:
1. Make a quick syrup
In a small saucepan, combine 1 cup sugar with 1 cup of the cold water.
Warm gently (don’t boil) and stir until the sugar fully dissolves.
→ This creates a smooth syrup so your lemonade isn’t gritty.
Let it cool a few minutes.
2. Juice your lemons
Roll the lemons on the counter to soften, then juice until you have 1 cup of fresh Ponderosa lemon juice.
Strain out seeds and excess pulp if you prefer a smooth texture.
3. Mix it all together
In a pitcher, combine:
• The cooled sugar syrup
• 1 cup lemon juice
• The remaining 4 cups of cold water
Stir well.
4. Adjust to taste
• If too strong → add more water.
• If too mild → add a splash more lemon juice.
5. Chill, and enjoy!

Just harvested my first ripe Centennial Variegated Kumquat! These trees and their fruit are so incredibly beautiful. They look like mini watermelons while they hang on the tree and once they’re ready to pick they turn orange! This particular fruit was the first from this tree and was a bit dry and flavorless but hopefully that will improve as the tree matures as i hear other people say they are pretty good 🌱

Unpopular opinion: Outdoor cats are NOT ok and most people are completely unaware of why…

Earlier on my walk in a local nature preserve I unfortunately came across MANY outdoor cats roaming the park… while they may look cute this is a terrible issue for the native wildlife that lives here…

Here in South Florida we often hear the news headlines talking about the harmful impact of invasive species such as the Burmese Pythons, Iguanas, or Lionfish all introduced by irresponsible pet keeping that are now decimating native wildlife populations… however there is another invasive species that causes equal damage or arguably more damage but has become all too normalized and goes untalked about… outdoor cats.

🐈 Ecological Impact
• Predation: Studies estimate that free-ranging cats kill 10–30 billion wild animals each year — mostly small mammals, birds, reptiles, and amphibians.
• Extinctions: Cats are directly linked to the extinction of over 60 species, mostly island-dwelling birds, reptiles, and small mammals that had no natural defenses.
• Ecosystem disruption: Cats don’t just remove individuals — they alter animal behavior, reduce biodiversity, and shift entire food webs.

Additionally outdoor cats face higher risks of injury, disease, and parasites, so be a responsible pet owner and keep your cats indoors or in a “cat-proofed” outdoor area for both their safety and health and the health and safety of local wildlife.

Still thinking about how delicious these fresh stone crab claws were 😋 I definitely need to go out and find some more soon! 🦀 If you have never tried Stone Crab Claws I’d highly recommend! The season here in Florida only runs Oct 15-May 1 so enjoy some while you can!

I was taking a walk and came across this beautiful Florida native Corn Snake 🐍

Corn Snakes also known as Red Rat Snakes are great to have around as they are nonvenomous, primarily eat rodents, and are mild tempered (this one didn’t even attempt to bite at all!). They feed on small lizards and frogs as juveniles and once large enough focus primarily on small rodents.

Due to their calm demeanor and beautiful colors they are common in the pet trade but I let this one go right back into the wild where I found it 🐍

My weight loss certainly hasn’t been a straight line but day by day I’ve been working to improve and focus on health rather then a number and I personally think I’ve never felt more confident. So to anyone out there looking for inspiration just know it takes consistency and dedication but the results will come if you focus on health over the numbers on the scale. You got this 👏
