I canned pinto beans today, and while everything seems to have processed fine, I’m already thinking about what I might do differently next time.
I followed a recipe I found on Pinterest. I soaked the beans for about 12 hours, then cooked them on the stove for 30 minutes this morning. The instructions said to drain them again after cooking, so that’s what I did.
For processing, I pressure canned the quart jars for 90 minutes, and I double-checked that timing with other sources and my pressure canner book just to be sure.
The recipe also said to put only one heaping cup of beans in each quart jar before adding the liquid. I followed that direction, but once everything was finished, the jars looked pretty empty to me and it feels like there’s a lot of unused space.
For those of you who regularly can dry beans, how much do you usually put in a quart jar while still leaving enough room for the beans to expand safely? I’d love to hear what method has worked well for you so I can improve the next batch. 🫘🫙 See less
