🍑🍑 Apricot Blackberry Upside-down Cake 🍑🍑

🍑 1 Cup Olive Oil ( or butter)
🍑 2/3 Cup Packed Light Brown Sugar
🍑 1 Pound Apricots, Pitted & Sliced
🍑 1/2 Cup Blackberries
🍑 1 Cup Flour
🍑 3/4 cup Yellow Cornmeal
🍑 2 Tsp.Baking Powder
🍑 1 Tsp. Salt
🍑 Zest of 1 lemon
🍑 3 Large Eggs
🍑 1 Cup Granulated Sugar
🍑 1 Tsp. Vanilla Bean Paste
🍑 1/4 Cup Milk

Preheat the oven to 350°

Grease a 9" round cake pan.

Add 1/4 cup olive oil ( or butter) to the cake pan and place over medium heat. Once the oil is warm, sprinkle in the brown sugar and stir. Remove from the heat.

Add the apricots in a spiral pattern on top of the brown sugar. Place blackberries around the Apricots. Chop any remaining apricots (only if you have leftovers that don't fit) and reserve to add to the cake batter.

In a bowl whisk together the flour, cornmeal, baking powder, salt and lemon zest. Set aside!

Add the eggs, granulated sugar and the remaining 3/4 cup olive oil (or butter) to the bowl of a stand mixer beat on medium speed until smooth, about 4 minutes. Next add the vanilla and milk and beat until smooth.

Add the dry ingredients and beat on low speed until combined. Stir in any remaining chopped apricots. Pour the batter into the prepared pan, place on a sheet tray, and bake until golden brown and a toothpick inserted into the center of the cake comes out clean, about 35 minutes. Let cool for 20 minutes before turning out onto a cake plate.

🫑🫑🫑 Meatloaf 🫑🫑🫑

2 lb ground beef
1 onion soup mix
2 cups French fried onions
3 eggs
1 cup beef stock
2 Tsp. Wortershire sauce
1 box savory herb stuffing or any other stuff flavor
1 Tsp. Garlic powder
2 TBS. Dried bell Pepper or 1 Fresh

Mix everything together put into a 10 inch skillet Bake 350° for 25 mins Take out and put topping on and put back into oven for 15-20 more mins

Topping:

1/2 cup brown sugar
1/2 cup ketchup
1 Tsp mustard

🍓🍓🍓 Strawberry Rhubarb Crumble 🍓🍓🍓

🍓 2 Cups Strawberries Sliced
🍓 2 Cups small pieces of rhubarb
🍓 1 3 oz. Box strawberry jello
🍓 1 Cup Sugar
🍓 1 Box Cake Mix White or Yellow
🍓 1 Cup Boiling Water
🍓 1/3 Cup Melted Butter

Spread strawberries and rhubarb in the bottom of a buttered 9x13 baking dish. Sprinkle jello over strawberries and rhubarb. Next sprinkle the sugar on top of the jello.Next dump cake mix over top the jello and pour boiling water on top of everything. lastly pour your melted butter on top and bake for 1 hr on 350°.
