Cooked up a rice and curry spread for some friends today and had to share a pic of the star dish — my Sri Lankan prawn curry. 🦐

If you’ve seen my shrimp curry recipe, you know I usually cook them with the shells on. This time I cleaned them to make it a bit easier to eat, and it turned out just as amazing.

I also figured out a way to cook it for less time so the prawns stay perfectly tender — I’ll share a video on that soon! For now, enjoy the recipe video and the dish I keep going back to over and over.

Baked Eggplant with Coconut-Date Curry

Tried this after spotting a whole baked eggplant curry online — and, of course, I had to make it my own! 😋 A silky coconut and date curry, rich with spices, hugging that perfectly roasted eggplant. Made both spicy and non-spicy versions so even my little one could join in. 🌶️👶

Comforting, creamy, and full of flavor — definitely one to make again!
