A Lazy Man's Chicken Biriyani | Bachelor Biriyani

Let’s be honest — we all love a good chicken biryani, but not everyone has the time (or energy) to go through all the marinating, layering, and long ingredient lists. That’s why I made this lazy one-pot biryani — a shortcut version that still delivers on flavor, without all the work.
It’s perfect for tired students, broke bachelors, lazy weekends, or honestly… anyone who just wants chicken biryani without the stress.

So let’s get this chicken biriyani cooking!

This One-Pot Lazy Biriyani is your new go-to! 🍛✨
No fancy steps. No endless ingredients. Just:

✅ Chicken
✅ Shan Mutton Biriyani Mix
✅ Plain Yogurt
✅ Rice
✅ One Pot

That’s it. No layering. No marinating. Just bold flavor with minimal effort. Perfect for students, busy folks, or anyone who’s not about that “proper” biriyani life today.

📌 Not authentic—but 100% delicious.

SRI LANKAN KALE MALLUNG

A healthy and vibrant side dish that perfectly complements a classic rice and curry meal! Traditionally made with gotu kola—a nutritious leafy green commonly found in Sri Lanka—this dish takes on a new twist when made abroad using kale as a substitute. And honestly, it works beautifully!

Mallung (or mallum) is a beloved Sri Lankan staple—shredded greens lightly sautéed with grated coconut, spices, and a touch of chili. It’s simple, wholesome, and packed with flavor. A regular feature on our plates back home, and one I love bringing to the table wherever I am.

Made some lamb curry, lentil curry, and my quick microwave papadum for dinner, and decided to plate it up.
Sri Lankan rice and curry is tricky to plate — it’s already beautiful in its natural, delicious “mess” — but I wanted to try a more structured look to stand out.
What do you think? Keep experimenting with plating, or embrace the classic messy, hearty style?

Found some beautiful lamb chops and couldn’t resist making my pan-fried lamb chops recipe — but with a twist!
Grilled instead of pan fried, added lamb fat for the pan sauce and served it with rice…smoky, rich, and absolutely worth it.

SRI LANKAN MUSHROOM CURRY

This is a popular go-to in many vegan households, often used as a flavorful substitute for meat-based curries. The texture of mushrooms—especially oyster mushrooms—closely resembles cuttlefish, making it a satisfying addition to any rice bowl without feeling like you're missing out on protein.

Personally, I find oyster mushrooms work best for this dish, offering the ideal texture and ability to soak up all those rich spices. I haven’t experimented with other mushroom varieties yet, but if you do try it with something different, I’d love to hear how it turned out! Feel free to share your experience in the comments.

Curried Bean Stir-Fry

This dish was never meant to happen — but I’m so glad it did. What started as a simple bean stir-fry quickly took a surprising turn when I accidentally added coconut milk. I caught myself halfway through, but instead of scrapping it, I decided to lean into the mishap. The result? A beautifully balanced dish — not quite a curry, not quite a stir-fry — but something uniquely delicious.

This Curried Bean Stir-Fry is creamy, flavorful, and perfectly textured: not too dry, not too saucy. It’s the kind of dish that lands right in the middle — a true fusion of two styles.

Whether you’re a fan of quick stir-fries or rich curries, this hybrid recipe might just surprise you the way it surprised me. Give it a try — and feel free to rename it once you’ve tasted it!

So what are you waiting for? Lets get cooking!

Kadala Thel Dala, or Sri Lankan deviled chickpeas, is a bold and flavorful vegan stir-fry that's perfect for just about any time of day. Whether you're having it as a party snack, tea-time nibble, bar-side bite, or even a savory breakfast, this dish brings the heat and comfort in every bite.

In Sri Lanka, chickpeas are also a popular street food. On the go, you'll find them simply boiled and served with chunks of coconut. But the deviled version is a jazzed-up home favorite, spicy and satisfying—a reliable sidekick to your evening drink or spicy snack cravings.

So what are you waiting for? Let’s get cooking!
