Low carb Chicken Fried Rice!!! So yummy!!
~took some cauliflower, brocolli & a few baby carrots for color
(“Riced” it in food processor)
~shredded or diced grilled chicken breast
~diced onion
~toasted sesame oil
~1/2 tsp ginger
~1tsp crushed garlic
Sauté onion in toasted sesame oil, add garlic and ginger. Add the grilled chicken.
Add Riced veggies & sauté with chicken mixture. If it seems dry add some low sodium chicken broth. (I did do this prob 1/4-1/3cup). Took less than 5 minutes to cook the veggies until crisp tender.
Garnish with green onion & coconut aminos if desired. Next time I make this, I am going to add some shelled edamame.
