A whole heritage pig dry-brined in Big Sur sea salt, slow-roasted over California coastal oak, presented tableside at 7:15PM. From Castroville artichoke starters and stone fruit panzanella to family-style sides and Warm Pecan Bourbon Pie finished with a round of Hog’s Coffee on the house.
