I still cook like we’re all still under the same roof. Like Mama’s about to tell everybody to wash their hands. Like the seats are about to fill up with the same faces I grew up with. But we’re all grown now. Got our own lives, our own tables. So I cook. And I remember. And I miss that in the quietest way.

Crispy baked chicken leg quarters using Haitian style cooking method and seasoning.

Ingredients

* 3-4 lbs chicken pieces
* 1 lime
* 1 tbsp vinegar
* 1 onion, sliced
* 4 garlic cloves
* 1 bell pepper
* 3 green onions
* 1 handful parsley
* 3 sprigs thyme
* 1 Scotch bonnet (optional)
* 2 tsp salt
* 1 tsp black pepper
* 1 chicken bouillon cube
* 1 tbsp tomato paste
* 2 tbsp oil
* 2 tbsp butter

Epis
Blend:

* Garlic
* Bell pepper
* Green onions
* Parsley
* Thyme
* Scotch bonnet
* Oil

Instructions

1. Clean chicken with lime and vinegar. Pat dry.
2. Season with epis, salt, pepper, bouillon, and tomato paste.
3. Marinate overnight (or at least 4 hours).
4. Place chicken and sliced onions in a baking dish.
5. Add butter on top.
6. Cover with foil and bake at 375°F for 45 minutes.
7. Uncover, baste with pan juices, and bake 25-35 minutes more until golden brown.
8. Broil 2-3 minutes for extra color.

Serve with:

* Haitian-style fried plantains (bannann peze)
* Salad russe
* Pikliz
* Rice and beans

Haitian Black Bean Rice

Ingredients

* 1 cup dry black beans
* 2 cups white rice, washed
* 1 small onion, chopped
* 2–3 garlic cloves, minced
* 1 sprig thyme
* 1 whole Scotch bonnet pepper (optional)
* 1 tbsp oil
* Salt to taste
* Water

Instructions

1. Rinse the black beans and place them in a pot with water.
2. Boil until tender, about 1½–2 hours. Reserve the bean liquid.
3. In a large pot, heat the oil and sauté the onion and garlic for 2–3 minutes.
4. Add the cooked beans, thyme, pepper, and salt.
5. Add about 4 cups of bean liquid (or bean liquid plus water) and bring to a boil.
6. Stir in the 2 cups of washed rice.
7. Cook uncovered until most of the liquid has been absorbed.
8. Cover, reduce heat to low, and cook for 20–25 minutes until the rice is tender and fluffy.
