It's almost time! Who's ready for Turkey Season? HuntChef's Wild Turkey & Green Chili Soup gives you a delicious unique way to prepare your wild turkey. The combination of wild turkey, green chilies, onions, tomatoes and garlic are the perfect balance while the HuntChef Seasonings give the soup an over the top flavor! Trust me your family is gonna gobble it up!
Ingredients:
1 wild turkey leg, deboned, trimmed (alternatively turkey or chicken thighs)
Reserve the leg bones for roasting and simmering in the soup
2 tablespoons Olive Oil
1 cup diced green chilies
1.5 tbsp HuntChef Party Fowl Seasoning
1.5 tbsp HuntChef Straight Outta Pontchartrain Seasoning
12 ounces of a Hoppy Beer
1 small onion, diced
1 medium tomato, diced
3 cloves of garlic, chopped
12 ounces chicken broth or water
1 10-inch wheat flour tortilla, plus more for serving if desired
Method:
Preheat a Dutch Oven over the fire or on the stove.
Add the Olive Oil and turkey to begin the browning process.
Add the onion and lightly brown.
Then add the tomato, garlic and green chilies and simmer over medium heat for about 5 minutes.
Roast or grill the turkey bones until well browned/caramelized, then add them directly to the soup to add flavor.
Add beer, HuntChef seasonings, and broth and simmer slowly, until turkey is tender, about 30 minutes.
Toast the wheat flour tortilla on the grill or over a stovetop until brown, but don't burn! Break them into small pieces and add to the soup. Simmer until everything is soft and the broth thickens slightly. If it absorbs too much broth, add more broth (or a little water) to get the consistency you want. Grill a few more tortillas for serving and for soaking up the soup in the bowls!! Season with coriander and enjoy!
