Spritzers, looking for a dinner idea? As promised, here is one of Christina’s fabulous salad 🥗 recipes!

Greek Orzo Salad

Dressing

- 4 tbsp. fresh lemon juice
- 1 tsp. Dijon mustard
- 1/2 c. extra-virgin olive oil
- 4 tbsp. freshly chopped dill, plus more for serving
- 1/4c. minced red onion
- Kosher salt
- Freshly ground black pepper

Salad

- 8 oz. orzo
- 3 Persian cucumbers, sliced into thin half-moons
- 2 c.cherry tomatoes, halved
- 1 (15.5-oz.) can chickpeas, drained and rinsed
- 1/2 c. pitted kalamata olives, halved
- 1 c. crumbled feta (about 1/4 lb.)
- Salad greens (choose from or mix of arugula, baby kale, romaine)

Prepare orzo per package.

Whisk together dressing ingredients. Adjust / add spices to taste.

In medium bowl mix remaining ingredients together and toss with dressing.

Let sit for 30 min or overnight in fridge.

Place salad greens in large bowl.

Pour mixed ingredients over greens in large bowl, garnish with toasted pine nuts, and serve.
