Cabbage Roll Soup
Ingredients
1 lb ground beef
2 teaspoons olive oil
1 small onion, finely diced
2 teaspoons minced garlic
4 cups coarsely chopped green cabbage
2 carrots, peeled and sliced
4 cups beef broth
3 (8 oz) cans tomato sauce
½ cup uncooked long-grain rice
1 bay leaf
3 tablespoons brown sugar
Salt and black pepper, to taste
2 tablespoons fresh parsley, chopped
How to Make It
1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef and season with salt and pepper. Cook for about 4–5 minutes, breaking it apart until browned.
2. Add the diced onion and garlic and cook for 2–3 minutes until fragrant and softened.
3. Stir in the cabbage, carrots, beef broth, tomato sauce, rice, bay leaf, and brown sugar. Season with additional salt and pepper to taste.
4. Bring the soup to a gentle simmer and cook for about 25 minutes, or until the rice is tender and the vegetables are soft.
5. Remove the bay leaf and discard it.
6. Sprinkle with chopped parsley and serve warm.
