Meet the Sunshine Saffron Scramble. It’s easy, beautiful, and the perfect way to make happiness a habit, right from your kitchen counter.

Recipe: Sunshine Saffron Scramble
Ingredients:
3 Pasture-Raised Eggs (for that extra Omega-3!)
1 tbsp Almond Milk (or water/dairy)
1 pinch Saffron Threads (bloomed in 1 tbsp warm liquid)
1/2 cup Baby Spinach
1 oz Soft Goat Cheese or Feta
1 tsp Ghee or Avocado Oil
Instructions:
Bloom Saffron: Place the saffron in 1 tbsp of warm water or milk for 5-10 mins. This releases that gorgeous color and aroma!
Whisk & Add Spinach: Beat the eggs with the milk and bloomed saffron liquid. Fold in the fresh spinach.
Cook Low & Slow: Heat oil in a pan over medium-low heat. Add the egg mixture. As it starts to set, use a spatula to gently pull the eggs from the edges to the center.
Fold & Serve: Just before the eggs are fully set, fold in your soft goat cheese. The heat from the eggs will make it perfectly gooey. Remove from heat and serve!
