About last night’s dinner…When I tell you I had been craving this baked potato all day, I am not joking. I picked it up at Sunday morning. I was excited because it had just been harvested from the farm the day before so it was super fresh. This put my carbs loving self in a very happy place.
Full menu:
•Baked potato with rosemary, garlic, black pepper and sea salt.
•seitan (“chicken” style) smothered with peppers, onions, olive oil, nutritional yeast, a dash of liquid smoke, garlic infused sea salt, smoked paprika, chili flakes, black pepper - added a bit of spring water to create the gravy so the seitan would soak up all the flavors.
•steam broccoli florets with a lemon-herb butter drizzled on top (used Earth Balance).

The birthday dinners continue! I’d heard great things about restaurant inside of the , but hadn’t made it there for dinner yet, so and I tried them out for my extended birthday festivities. The vegan paella was superb; I highly recommend it. The cocktails are on point, and the aesthetics make the experience even better.

This birthday dinner in Belize felt like more than a celebration. It felt like a preview.

A beautiful table. Thoughtful details. Good conversation. Really good vegan food. Champagne flowing. The kind of night where you can just be present and enjoy the moment.

This is the kind of experience I create.

I didn’t have any Vanilla ice cream or gelato, but I still wanted some to make some affogato (in a fancy glass of course). I had a pint of dark chocolate truffle from , so I used that. Basically, I wanted an excuse to have spiked espresso this late in the evening (I put a little liqueur in it). It was a tasty little treat.
