About last night’s dinner…When I tell you I had been craving this baked potato all day, I am not joking. I picked it up at Sunday morning. I was excited because it had just been harvested from the farm the day before so it was super fresh. This put my carbs loving self in a very happy place.
Full menu:
•Baked potato with rosemary, garlic, black pepper and sea salt.
•seitan (“chicken” style) smothered with peppers, onions, olive oil, nutritional yeast, a dash of liquid smoke, garlic infused sea salt, smoked paprika, chili flakes, black pepper - added a bit of spring water to create the gravy so the seitan would soak up all the flavors.
•steam broccoli florets with a lemon-herb butter drizzled on top (used Earth Balance).
