I'm bringing sexy back in the form if another red sauce based, steak, provolone, mozzarella, peppers and onion pie on a sesame seed crust!

Absolute fire!

This was a 62% hydration dough recipe using a 50/50 blend of All Trumps and KA AP flours, allowed to rise at RT for about 5 hours, with structural and folds every 20 or so minutes and then cold proofed for 24 hours. I WILL ABSOLUTELY BE GOING THIS ROUTE AGAIN! This NY style dough was on point.

Presenting this thinly sliced ribeye steak, peppers, and onion pizza. I suppose you could call it a Philly Cheesesteak minus the red base? Whatever you want to call it, this may have been one of the better tasting pizzas I've made to date!

I highly recommend you try this combo at least once in your life. So good. Next time, I'll include some provolone cheese, too!
