Lost Black American Recipes: Blackberries & Dumplings 🍇🥟 Blackberries and dumplings is a sweet summertime dish rooted in Black American food culture. When sugar and money were scarce, the land provided. Black families relied on foraging, gathering blackberries that grew freely along fence lines, woods, and roadsides across the South. What began as necessity became tradition — turning simple ingredients into a communal, nourishing meal. Passed down orally and cooked intuitively, this dish was rarely written into cookbooks. Flour stretched what little was available, dumplings absorbed the berry juices, and one pot could feed many for very little. Though we still see cobblers today, blackberries and dumplings remain a largely forgotten seasonal treat — one deeply connected to land, resilience, and care. Blackberries & Dumplings Recipe Blackberry Syrup: 4 cups blackberries 1 cup sugar 2 cups water 1 tbsp lemon juice Lemon zest Dumplings: 2 cups flour ¼ cup sugar 1½ tsp baking powder ½ tsp salt ¼ tsp nutmeg ¾ cup milk 1 egg 1 tsp vanilla Simmer blackberries with sugar, water, lemon juice, and zest until juicy. Mix dumpling dough until it feels right. Drop spoonfuls into simmering berries, don’t stir, cover and cook 15 minutes. Uncover and simmer 5 more minutes. Serve warm with plenty of syrup. Before crisps and crumbles, fruit was layered with buttered bread and baked into something jammy, cozy, and meant to be shared. This version uses challah cubes for a soft buttery interior and a crisp breadcrumb topping for the perfect texture contrast. Serve warm with evaporated milk (heritage) or vanilla ice cream (modern). Save this recipe and help bring this dessert back. 🍒 Cherry Brown Betty (Challah Cubes + Crumb Topping) Cherry Filling 6 cups fresh or frozen cherries, pitted (900 g) ¾ cup granulated sugar (150 g) ¼ cup brown sugar (50 g) 1 tbsp lemon juice (15 ml) 1 tsp vanilla extract (5 ml) 1 tsp cinnamon (2–3 g) ¼ tsp nutmeg (optional) ¼ tsp salt Light thickener 1–1½ tbsp cornstarch (8–12 g) 2 tbsp cold water (30 ml) Challah Bread Layers (soft interior) Important bread tip Bread should be slightly stale so it absorbs the cherry juices properly. • Leave cubed bread uncovered overnight or • Toast cubes on a baking sheet at 300°F / 150°C for 8–10 minutes until slightly dry but not browned. 6 cups challah bread, cut into ¾-inch cubes (about 300 g) ¾ cup unsalted butter, melted (170 g) ½ cup brown sugar (100 g) 1 tsp cinnamon Pinch of salt Buttery Breadcrumb Topping (crispy top) 1½ cups fresh breadcrumbs (75 g) ¼ cup brown sugar (50 g) ¼ cup unsalted butter, melted (57 g) ¼ tsp cinnamon Pinch salt Instructions Preheat oven to 350°F / 175°C and butter a 9×13 in (23×33 cm) dish. Mix cherries, sugars, lemon juice, vanilla, cinnamon, nutmeg, and salt. Stir in a slurry made from cornstarch + cold water. Toss challah cubes with melted butter, brown sugar, cinnamon, and salt. Spread half in dish, add cherry filling, top with remaining cubes. Mix breadcrumb topping ingredients and sprinkle over the top. Bake 45–55 minutes until golden and bubbling. Rest 15–20 minutes before serving.
