Creamy Corn & Red Potato Salad 🥔🌽
Ingredients 📝
Salad Base:
2 lbs red potatoes, diced
1 cup sweet corn (fresh, frozen, or canned)
1/2 cup diced celery
1/2 cup diced carrots
1/4 cup chopped green onions
1/4 cup chopped fresh parsley
Creamy Dressing:
1/2 cup mayonnaise
1/4 cup sour cream or Greek yogurt
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp honey or sugar
Salt and pepper, to taste
Instructions 🥄
Cook the Potatoes:
Place diced potatoes in a pot of salted boiling water. Cook for 10-15 minutes or until tender but not mushy. Drain and let cool completely.
Prepare the Dressing:
In a mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, honey, salt, and pepper. Adjust seasoning to taste.
Assemble the Salad:
In a large bowl, combine cooled potatoes, sweet corn, celery, carrots, green onions, and parsley.
Mix it Up:
Pour the dressing over the salad and gently toss until everything is evenly coated.
Chill and Serve:
Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled and enjoy!
