When I came home this morning after my morning routes, I had a pretty good craving for biscuits and gravy! I was out of buttermilk, so I mixed up a half a cup of 2% milk with one and a half teaspoons of white vinegar to make my homemade buttermilk biscuits . It was just me so I made this tiny bit of gravy in my little 6 inch iron skillet.. this is the smallest batch of biscuits and gravy I’ve ever made!! I shouldn’t say it was just me I did share with my doggies! Have a great day, everyone!

Zucchini Bread
3 large eggs
2 cups white sugar
1 cup vegetable oil
2 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
½ cup chopped walnuts (optional)
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
¼ teaspoon baking powder
(Makes 2 loaves)
Preheat the oven to 325 degrees F (165 degrees C). Grease and flour two 8x4-inch loaf pans.
Beat eggs in a large bowl until light and frothy. Add sugar and oil; mix until well combined. Stir in zucchini and vanilla. Combine flour, nuts, cinnamon, salt, baking soda, and baking powder; stir into egg mixture until incorporated. Divide batter into the prepared pans
Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, 60 to 70 minutes

One of my favorite meals! It was also my Momma’s favorite too! We have this meal every now, and then. It’s not something we have all of the time because it’s a lot, so that makes it even better when we do have it! I always have leftovers, so there’s a couple meals from this one plate.
Soup beans, jalapeño cornbread, macaroni and tomatoes, mustard greens, kraut & wieners, salmon Pattie’s, and French onion potatoes! I love buttermilk cornbread, but my husband loves the jalepeno cornbread, so we have it at times too.
Macaroni & Tomatoes:
-I boil my noodles, then drain them. Add a can of petite diced tomatoes, and enough tomato juice to cover them. I also add some bacon grease, and some pepper to taste. Let them simmer for a while.
Salmon Pattie’s:
Can of salmon, I use the juice. Add enough flour, and cornmeal to get it to come together. Add an egg, salt & pepper. Sometimes I add diced onion. Fry until golden brown.
French Onion Potatoes:
Diced potatoes with French onion soup packet sprinkled over them. I add a bit of oil to them, before I sprinkle the packet over them to help keep them moist! Bake at 350 for 35-40 minutes.

This is a one pound butter mold. I was blessed to have farming grandparents. My “Pa” milked the cows and did the barn chores before breakfast. The pale of milk got strained through a cheese cloth into a crock to let the cream rise. The cream became home churned butter and the milk was put in the fridge. Some more cream would be scooped off onto our morning cereal. The “blue milk” was waiting for us when we came in from our adventures wandering that 100 acres! The most refreshing drink I’ve ever experienced! Good memories! As I watch the kids of today I realize how fortunate I was!

I'll never grow tired of meals like this. Navy beans, fried potatoes and squash. Fresh sliced tomato and onion from the garden, with cornbread. A big cold glass of milk. I grew up eating these kind of meals in western North Carolina. I never realized how good life was back then.

I went to make my chicken and dumplins tonight after I’d boiled the hen, and realized that I didn’t have most of the ingredients that I needed for the dumplins. I started to change the supper plan but my kids begged me to make them, so I improvised and made up a recipe with what I had. Holy moly, these were the best dumplins I have ever made! Praying I’m able to make them again since I don’t have an actual recipe and I didn’t measure lol.
Ok friends.. this is my “recipe”
I started by boiling a hen. Once it was done I took it out, strained off the goop from the broth, added a stick of butter, some salt and pepper and some additional chicken broth. I love the Knorr chicken bouillon granules for chicken broth.
For the dumplins
3 cups self rising flour
About 3/4 stick of softened butter
About 1/2 cup whole milk
About 1/2-3/4 cup chicken broth (from boiled hen)
Salt and pepper to taste.
Cut the butter into the flour. Add the liquids and stir to mix. Add salt and pepper to taste. My dough was sticky so I added a bit more flour. I also dusted the flour ball and tossed it in the bowl as I pinched off bits to throw into the broth.

When I was young, I lived in Atlanta. I visited my Mamaw and Papaw, wherever they lived, mostly once a year in the summer. Papaw was a preacher and he pastored in the mountains of NC, VA and TN. Whenever I visited them for summer vacation, I couldn't wait to shuck corn, break beans and pick blackberries because I knew I was going to eat some Mamaw food. Delicious comfort food that satisfied my young soul for a year. I'm 65 years old now and I'm home in Western North Carolina. I love this place. And now I'm cooking in the traditional way of my Mamaw. Cast iron, bacon grease and fresh meat and produce. I enjoy this FB page because it reminds me of my youth, family and home. I love cornbread.
Now, I know you don't see cast iron, but work with me here. I work as a travel nurse. Right now I'm in Kansas, 1100 miles away from home. Bringing cast iron with me isn't practical. But the cornbread is still delicious 💕
