There's something special about picking fruit straight from the tree.
This apple came home with me from the orchards of Blue Ridge, Georgia, and I'm still deciding what to make with it.
Maybe a tart.

When we're craving something sweet after dinner, I like finding ways to satisfy that craving while still being mindful of protein and relying on naturally sweet ingredients whenever possible.
The peaches provide most of the sweetness, the whipped cottage cheese adds protein and a creamy texture, and the maple syrup and honey are used just enough to enhance the flavors—not overpower them.
It's one of those desserts that feels indulgent while still leaving you feeling good afterward.

Summer cooking doesn't have to be complicated.
Just a few fresh ingredients, a hot grill, and dinner comes together beautifully.
One of those meals that reminds me why I love cooking this time of year.

Grilled Shrimp, Zucchini & Protein Pasta
Serves 4
For the pasta and tomato sauce
8 ounces protein pasta
2 tablespoons olive oil
3 cloves garlic, minced
2 cups grape tomatoes
¼ teaspoon salt, plus more for the pasta water
¼ teaspoon black pepper
¼ cup fresh basil, roughly torn
¼ cup freshly grated Parmesan, optional
For the shrimp skewers
1 pound wild-caught Argentine shrimp, peeled and deveined
1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
For the zucchini skewers
2 medium zucchini, cut into thick rounds
1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
Directions
Cook the pasta according to the package directions. Reserve about ½ cup pasta water, then drain.
Heat 2 tablespoons olive oil in a skillet. Add the garlic and cook for about 30 seconds.
Add the grape tomatoes, salt, and pepper. Cook for 6–8 minutes, stirring occasionally, until the tomatoes soften and release their juices. Stir in the basil.
Toss the shrimp with its oil and seasonings. Thread onto skewers.
Toss the zucchini separately with its oil and seasonings. Thread onto separate skewers.
Grill the shrimp for about 3 minutes per side, until opaque and lightly charred.
Grill the zucchini for about 3–4 minutes per side, until tender with grill marks.
Toss the pasta with the tomato mixture. Add a splash of reserved pasta water if needed.
Serve with the grilled shrimp and zucchini, and finish with Parmesan if desired

We've all come across the watermelon and feta salad at some point over the last few years. Every time I see another version of it, I can't help but smile and think back to my childhood.
Growing up in Albania, many of us ate watermelon, cantaloupe (or grapes), white cheese, and a loaf of crusty bread from the neighborhood bakery. Just a few simple ingredients, yet dinner was fresh, satisfying, and more than enough.
When my kids were younger, they looked at me like I had come from outer space whenever I'd put watermelon and cheese on the same plate while telling them stories about growing up in Albania.
Now, every summer when watermelon and feta starts making the rounds on social media, I can't resist saying...
"See? I told you it was special." 😄
Sometimes the best traditions don't need reinventing. They just need someone to remember them.

After a long typical hot Florida summer day I wanted a light refreshing dinner with minimal mess or cooking. The kids, however, wanted McDonald’s so we found a happy medium: homemade burgers on our newly screened patio. Their side beef tallow fries, while the grown-ups opted for a crunchy apple and cabbage slaw. Some meals become favorites because of the recipe. Others become favorites because everyone needs a cheat meal once in a while.
Tonight’s menu came together in under 30 minutes. Homemade burgers, fresh buns, crispy fries, a crunchy apple & cabbage slaw, and a simple burger sauce that has quietly become a family favorite.
I’ve included the recipes throughout the carousel if you’d like to save them for your own table. I couldn’t think of a better recipe to kick off this new adventure. I hope it makes its way to your table, too.
