I made a quinoa veggie bowl with black & pinto beans, bell peppers, and pico de gallo topped with salsa con queso with a side of flaxseed blue corn tortilla chips. I was just craving this because I always order something similar when out. The ingredients made me realize that this is a dish that is very reminiscent of the meals that southwestern tribes make. π½π«π
