👉 Hey Y’all…
Had a bit of a scare.
Ordered chicks from Rudd, Ia, and shipped Wednesday 🥳night. Went to Des Moines, Ia. Went to Atlanta on Thursday …. Spent ALL DAY Thursday in HOT-LANTA’s post office 😵‍💫 Git to our post office on Friday. Thankfully all chick 🐣 are 💯 percent. Next few day are critical. It they are ok through the weekend, we can expect ….
At the VERY LOW END… 4,400 yearly eggs
High end around 9,500 eggs 🥚
Yeah… we got us some high production layers 🤣🥳😵‍💫
We love us them rich brown eggs 🍳

👉 Hey Y’all…
Another busy day for Dale and I 💜
1. Filled 7 freeze dryer trays of sliced purple cabbage. About 30 # this go round.
2. Sliced and cooking down 25 pounds of tomatoes 🍅 for sauce and juice to be canned.
3. Disc cut and marinating 25 pounds of tomatoes 🍅 to go into the freeze dryer.
So far… 150 # of tomatoes.
Next week we’ll be using 50 more pounds of tomatoes 🍅 for salsa, pico de gallo, and homemade ketchup…. Maybe 75 # just to be sure 👍🏼
Still have red, green, and jalapeño peppers 🫑🌶️ and a small amount of okra to process.
Ain’t FAME LIFE such a blessing 💕

👉 Hey Y’all…
After freeze drying and vacuum sealing 35+ pounds of tomatoes 🍅, jalapeños 🌶️, and onions 🧅 …. We have 8 half gallons, 1 quart, and a half pine of the finest Pico de Gallo you will taste 🥳
Oops, I didn’t get the label changed on the half pint. It’s fixed now 🤣

👉 Hey Y’all…
Next time you wonder why homemade is more expensive… you can go to the store and pay less… ponder on this 💝
To make 2.5 sticks (butter size) of tomato 🍅 paste, it takes 5+ pounds and 6 hours to slowly cook it, remove skins and seeds with a strainer, and stir the Dutch oven every 20 minutes for a couple hours, then every 15 minutes for 3 hours, and because it’s getting thick, continue to stir for the last hour.
Why do it you ask… 🤔
Because it’s homemade. It tastes amazing. We know what went into it. We know what didn’t.
No chemicals. No pesticides.
No unpronounceable ingredients.
💯 percent goodness and love.💕

After a productive morning processing homegrown meat birds 🐔, I guess Widget was channeling my need to nap and decided to back her butt in my face and sprawl out 💤
After the birds are in ice water for a few days, we’ll be excited to see what the freezer weight will be 🤔
