🇬🇧 Sausage, Bacon, Egg, Chips & Beans Plate
🛒 Ingredients (for 2 servings)

Meat & Eggs:

4 good-quality pork sausages (e.g., Cumberland or Lincolnshire)

4 rashers of back bacon (or streaky if you prefer crispy)

2 eggs (fried or scrambled, your choice)

Chips:

2 large potatoes, peeled and cut into thick chips

Vegetable oil for frying (or baking)

Salt to taste

Beans:

1 can (400g) baked beans (Heinz preferred for authenticity)

Optional:

Buttered toast or fried bread

HP Sauce or ketchup

Black pepper and chili flakes for seasoning

🔪 Instructions
1. Prepare the Chips

Cut potatoes into chunky chips.

For frying: Soak in cold water for 30 minutes, pat dry, and double-fry:

First fry: 325°F (160°C) for 5–6 mins (soft but not colored). Drain and rest.

Second fry: 375°F (190°C) until golden and crispy. Season with salt.

For oven-baking: Toss in oil, spread on a tray, and bake at 425°F (220°C) for 30–40 mins, flipping halfway.

2. Cook the Sausages

Grill, pan-fry, or oven-bake sausages until browned and fully cooked (internal temp of 160°F / 70°C). Usually takes 20–25 minutes on medium heat.

3. Fry the Bacon

Cook in a skillet or under a grill until crispy or to your liking.

4. Warm the Beans

Heat beans in a saucepan over medium-low heat, stirring occasionally until warmed through.

5. Fry the Eggs

In a nonstick pan, heat a little oil or butter and crack in the eggs. Cook sunny-side up, or flip for over-easy.

🍽️ To Serve

Plate it all together:

2 sausages, 2 rashers of bacon, 1 fried egg

A generous serving of chips

A scoop of hot baked beans on the side

Add toast or fried bread and your favorite sauces for the full experience.
💡 Tips

Use a sheet pan and cook bacon and sausages together in the oven for less cleanup.

Try adding fried mushrooms or grilled tomatoes for an even more complete breakfast.

Great with a hot cuppa tea, strong coffee, or even a cold beer if you’re feeling cheeky.

🍋 Lemon Raspberry Meringue Cheesecake
⭐ Components:

Graham cracker crust

Lemon cheesecake filling

Raspberry swirl

Toasted meringue topping

🥣 Ingredients
For the Crust:

1 1/2 cups (150g) graham cracker crumbs (or digestive biscuits)

1/4 cup (50g) granulated sugar

1/3 cup (75g) melted butter

For the Lemon Cheesecake:

3 (8 oz) packages cream cheese, softened (680g)

3/4 cup (150g) granulated sugar

1/4 cup (60ml) sour cream

3 large eggs

1 tbsp lemon zest

1/3 cup (80ml) fresh lemon juice

1 tsp vanilla extract

For the Raspberry Swirl:

1 cup (120g) fresh or frozen raspberries

2 tbsp sugar

1 tsp lemon juice

For the Meringue Topping:

4 large egg whites

1/2 cup (100g) sugar

1/4 tsp cream of tartar

1/2 tsp vanilla extract

🔪 Instructions
1. Make the Crust

Preheat oven to 325°F (160°C).

Mix graham crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.

Bake for 10 minutes, then set aside to cool.

2. Prepare Raspberry Swirl

In a small saucepan, cook raspberries, sugar, and lemon juice over medium heat for 5–8 minutes until thickened.

Strain through a sieve to remove seeds. Let cool.

3. Make Lemon Cheesecake Filling

Beat cream cheese and sugar until smooth and creamy.

Add sour cream, lemon zest, lemon juice, and vanilla. Mix well.

Beat in eggs one at a time on low speed (don’t overmix).

Pour filling over the cooled crust.

4. Add Raspberry Swirl

Drop spoonfuls of raspberry sauce over the filling and swirl gently with a knife.

5. Bake the Cheesecake

Place pan on a baking sheet and bake at 325°F (160°C) for 50–60 minutes, until center is set but slightly jiggly.

Turn off oven and crack the door open. Let cheesecake cool in oven for 1 hour.

Refrigerate at least 4 hours or overnight.

6. Make and Toast the Meringue

In a heatproof bowl over a simmering pot of water (double boiler), whisk egg whites, sugar, and cream of tartar constantly until sugar dissolves and mixture is warm (160°F or 70°C).

Remove from heat and beat with electric mixer until stiff, glossy peaks form (5–7 mins). Add vanilla near the end.

Spread meringue over chilled cheesecake. Use a torch to toast the meringue until golden — or broil briefly (watch closely!).

🍰 Serving Suggestions

Garnish with fresh raspberries and lemon zest.

Chill 15–30 minutes before serving to help the meringue set.
