🥩🦐 Garlic Butter Steak & Shrimp over Yellow Rice
🔸 Ingredients:
For the Steak:
1 lb sirloin or ribeye steak, cut into cubes

2 tbsp olive oil

1 tbsp Worcestershire sauce

1 tsp smoked paprika

1 tsp garlic powder

Salt & pepper to taste

For the Shrimp:
½ lb large shrimp, peeled and deveined

2 tbsp butter

3 cloves garlic, minced

Juice of ½ lemon

Salt & pepper

Fresh parsley for garnish

For the Yellow Rice:
1½ cups long grain rice

3 cups chicken broth

1 tsp turmeric

½ tsp cumin

½ tsp salt

1 tbsp butter

For the Broccoli:
2 cups broccoli florets

1 tbsp olive oil

Salt & pepper

Pinch of chili flakes (optional)

🔹 Instructions:
1. Make the Yellow Rice:
In a pot, melt butter. Add rice, turmeric, cumin, and salt. Stir for 1–2 minutes.

Pour in chicken broth, bring to a boil.

Reduce heat, cover, and simmer for 18–20 minutes until rice is tender and fluffy.

2. Roast or Sauté Broccoli:
Toss broccoli with olive oil, salt, and pepper.

Roast at 425°F (220°C) for 15–20 minutes OR sauté in a skillet until charred and tender.

3. Cook the Steak Bites:
In a bowl, mix steak cubes with olive oil, Worcestershire, paprika, garlic powder, salt, and pepper.

Sear in a hot skillet for 3–4 minutes until browned but tender. Remove and set aside.

4. Sauté the Shrimp:
In the same skillet, melt butter and add garlic. Cook until fragrant.

Add shrimp, season with salt, pepper, and lemon juice. Cook for 2–3 minutes until pink.

5. Assemble:
Plate yellow rice first.

Top with charred broccoli, steak bites, and shrimp.

Drizzle with remaining garlic butter from the skillet.

Sprinkle chopped parsley over the top.

💡 Optional Add-ons:
Add a drizzle of garlic aioli or creamy herb sauce for extra richness.

Mix in sautéed onions or bell peppers for more flavor.

Ingredients:
For the Salmon:
- 2 salmon fillets (6–8 oz each), skin-on
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika (optional, for depth)

For the Mango-Avocado Salsa:
- 1 ripe mango, diced
- 1 ripe avocado, diced
- ¼ cup red onion, finely diced
- 2 tbsp fresh cilantro, chopped
- 1 jalapeño (seeded, minced; omit for mild)
- Juice of 1 lime
- Salt to taste

For the Sriracha Aioli:
- ¼ cup mayonnaise
- 1 tbsp Sriracha (adjust to taste)
- 1 tsp lime juice
- ½ tsp honey (optional, to balance heat)

Instructions:

1. Prep the Salsa:
- In a bowl, gently combine **mango, avocado, red onion, cilantro, jalapeño, lime juice, and salt.
- Chill until serving to let flavors meld (avoid making too early—avocado browns).

2. Make the Sriracha Aioli
- Whisk together mayonnaise, Sriracha, lime juice, and honey. Set aside.

3. Cook the Salmon:
1. Pat salmon dry (crucial for crispy skin). Season with salt, pepper, and smoked paprika.
2. Heat olive oil in a non-stick skillet over medium-high heat until shimmering.
3. Place salmon skin-side down. Press lightly for 10 seconds to prevent curling.
4. Cook 4–5 minutes until skin is golden and crispy. Flip, then cook 2–3 minutes more for medium (adjust for doneness).

4. Plate & Serve:
-Dot with Sriracha aioli (or drizzle in zigzags).
- Place salmon skin-side up on plates.
- Spoon salsa generously over the top.

Chicken:

Chicken drumsticks 🍗

Olive oil 🛢️

Garlic cloves, minced 🧄

Paprika, thyme, oregano 🌿

Lemon juice 🍋

Salt & black pepper 🧂

Vegetables:

Potatoes 🥔

Carrots 🥕

Red bell peppers 🌶️

Sweet potatoes 🍠

Olive oil 🛢️

Garlic powder 🌾

Fresh parsley 🌿

Salt & pepper 🧂

Instructions:
Toss chicken drumsticks with olive oil, minced garlic, paprika, thyme, oregano, lemon juice, salt, and pepper. In a baking dish, mix diced potatoes, carrots, peppers, and sweet potatoes with oil, garlic powder, salt, and pepper. Place seasoned drumsticks on top of the veggies and bake until chicken is golden and cooked through, and vegetables are tender. Garnish with freshly chopped parsley before serving.

Notes: Add chili flakes for spice. Swap drumsticks with thighs or whole legs if preferred.
