If you’re looking for a dish that’s bursting with flavor, texture, and freshness, look no further! This little toast is packed with creamy ricotta, juicy tomatoes, and the tangy crunch of sourdough—each bite feels like a celebration of simple ingredients done right.

It’s the kind of dish that can easily be a breakfast, a light lunch, or even a satisfying snack, all while being so easy to make that you’ll wonder why you didn’t try it sooner.

Ingredients ~
4 slices rustic sourdough bread, toasted
1 cup ricotta cheese
2 large tomatoes, sliced
2 Tbs olive oil
1 Tbs everything bagel seasoning
Fresh parsley, chopped
Salt & Pepper

Method ~
1. Toast the sourdough bread.

2. Spread a thick, even layer of ricotta cheese over each slice of toasted sourdough.

3. Top the ricotta with sliced tomatoes.

4. Drizzle olive oil over the tomatoes.

5. Sprinkle everything bagel seasoning, along with salt and black pepper, over the top.

6. Finish with a sprinkle of fresh chopped parsley for added flavor and color.

Spicy & Creamy Peri-Peri Chicken Over Fluffy White Rice
🌶️ Dive into the comforting flavors of our Creamy Peri Peri Chicken Casserole, complete with a side of aromatic garlic rice. It’s a creamy, garlicky treat that will satisfy your cravings and warm your soul! 🍚🌶️

Ingredients:
2 tbsp olive oil
4 boneless, skinless chicken breasts
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
1 medium onion, finely chopped
3 cloves garlic, minced
1 cup chicken stock
1 cup heavy cream
3 tbsp peri-peri sauce
1 tsp lemon juice
2 cups cooked white rice
Fresh parsley, chopped (for garnish)

Directions:
Prepare the Chicken

Season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.
Rub the seasoning into the chicken to coat it evenly.
Sear the Chicken

Heat the olive oil in a large skillet over medium-high heat.
Sear the chicken for 3-4 minutes per side until golden brown.
Remove the chicken from the skillet and set it aside.
Sauté the Aromatics

In the same skillet, add the chopped onion and minced garlic.
Sauté for 2-3 minutes until soft and fragrant.

Create the Sauce

Pour in the chicken stock, scraping up any browned bits from the bottom of the pan.
Stir in the heavy cream, peri-peri sauce, and lemon juice.
Simmer for 3-4 minutes until slightly thickened.
Simmer the Chicken

Return the seared chicken to the skillet, coating it in the sauce.
Lower the heat and let it simmer for 8-10 minutes until fully cooked (internal temperature 165°F/74°C).
Serve

Plate the cooked rice and spoon the creamy peri-peri chicken on top.
Garnish with fresh parsley and serve hot.

Ingredients (1 portion):
120 g veal filet, 4 baby carrots, 5 cherry tomatoes, lemon zest, veal jus, fresh thyme, olive oil, salt, pepper

How to Make It:
Sear veal filet and finish in oven to medium-rare. Roast carrots and tomatoes with thyme and olive oil. Reduce veal jus with lemon zest. Plate filet over the vegetables, spoon jus on top and finish with fresh thyme.

🍗 Honey BBQ Chicken Wings with Creamy Mac & Cheese
🔻 PART 1: HONEY BBQ WINGS
🍗 Ingredients:
2 lbs chicken wings

1 cup buttermilk (for marinating)

1 tsp garlic powder

1 tsp paprika

1 tsp salt

½ tsp black pepper

1 cup all-purpose flour (for coating)

Oil (for frying)

🍯 Honey BBQ Sauce:
1 cup BBQ sauce (Sweet Baby Ray’s or your favorite)

¼ cup honey

1 tbsp hot sauce (optional, for a kick)

1 tbsp butter

1 tsp Worcestershire sauce

½ tsp garlic powder

🔧 Instructions:
Marinate Wings: Soak the wings in buttermilk with salt, pepper, paprika, and garlic powder for at least 2 hours (or overnight).

Coat & Fry: Dredge in flour. Fry at 350°F (175°C) for about 8–10 minutes until crispy and golden.

Make Sauce: Simmer BBQ sauce, honey, butter, hot sauce, Worcestershire, and garlic powder in a small pot until smooth and glossy (about 5 minutes).

Coat: Toss fried wings in warm honey BBQ sauce. Garnish with chopped parsley.

🔻 PART 2: SOUTHERN MAC & CHEESE
🧀 Ingredients:
2 cups elbow macaroni

2 tbsp butter

2 tbsp all-purpose flour

2 cups milk (warm)

2 cups sharp cheddar cheese (shredded)

1 cup mozzarella (optional)

½ tsp salt

¼ tsp pepper

½ tsp paprika

Pinch of ground mustard (optional)

Chopped parsley (for garnish)

🔧 Instructions:
Boil Pasta: Cook macaroni in salted boiling water until just al dente. Drain and set aside.

Make Cheese Sauce: In a pot, melt butter. Whisk in flour to make a roux. Slowly add milk, whisking constantly until thickened.

Add Cheese: Stir in cheeses, salt, pepper, paprika, and mustard until melted.

Mix: Fold pasta into cheese sauce. Optional: Top with more cheese and bake for 15 minutes at 375°F for a golden top.

Serve: Plate with wings and garnish with chopped parsley or scallions.

🔁 Optional Add-ons:
Add crumbled bacon to mac & cheese

Serve with ranch or blue cheese dip
