Sopranoโ€™s Sunday Gravy
"My house smells so heavenly when this comes out of the oven! Everything is jumping to eat it!."

Ingredients
For the Sauce:

2 tablespoons olive oil

1 lb meaty pork neck bones or 1 lb pork spareribs

1 lb veal stew meat or 2 veal shoulder chops

1 lb Italian sausage

4 garlic cloves

1/4 cup tomato paste

3 (28-ounce) cans peeled Italian tomatoes

2 cups water

6 leaves fresh basil, torn into small pieces

For the Meatballs:

1 lb ground beef (or combination of beef and pork)

1/2 cup plain breadcrumbs

2 large eggs

1 teaspoon finely minced garlic

1/2 cup freshly grated Romano cheese or Parmesan cheese

2 tablespoons finely chopped fresh flat-leaf parsley

1 teaspoon salt

Freshly ground pepper, to taste

2 tablespoons olive oil

To Serve:

1 lb pasta shells or rigatoni pasta, cooked and hot

Freshly grated Romano or Parmesan cheese

DOES ANYONE HERE ACTUALLY STILL EAT Beef Pot Roast with Potatoes, Carrots, and Mashed Potatoes
Ingredients:
For the Pot Roast:
3-4 lbs beef chuck roast
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
4 cups beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
Salt and pepper to taste
6 large carrots, peeled and cut into chunks
6 large potatoes, peeled and cut into chunks
For the Mashed Potatoes:
4 large potatoes, peeled and cubed
1/2 cup unsalted butter
1/2 cup whole milk
Salt and pepper to taste
Instructions:
1. Prepare the Pot Roast:
Preheat your oven to 325ยฐF (165ยฐC).
Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Season the beef chuck roast with salt and pepper and sear it on all sides until browned. Remove the roast from the pot and set it aside.
In the same pot, add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute.
Stir in the beef broth, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Bring to a simmer.
Return the beef roast to the pot, cover with a lid, and transfer it to the preheated oven.
Roast for 3-4 hours, or until the beef is fork-tender, adding the carrots and potatoes halfway through the cooking time.
2. Prepare the Mashed Potatoes:
While the roast is cooking, place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes or until the potatoes are tender.
Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt and pepper to taste.
3. Assemble the Dish:
Once the pot roast is done, remove the roast and vegetables from the pot. Slice the roast and place it on a serving platter, surrounded by the carrots and potatoes.
Spoon some of the sauce over the beef and vegetables, then serve alongside the mashed potatoes.

Easy Chicken and Dumplings
Ingredients:
For the Chicken and Broth:
4 cups cooked chicken or turkey, chopped
1 cup chopped celery
1 (10.5 oz) can cream of chicken soup
2 (10.5 oz) cans chicken broth
3 cans of water (use the empty soup can to measure)
For the Dumplings:
2 cups self-rising flour
1/4 cup shortening
3/4 cup boiling water (add gradually as needed)
Instructions:
1. In a large soup pot, combine the chopped chicken, celery, cream of chicken soup, chicken broth, and water. Bring to a boil over medium-high heat. Cover and let simmer while preparing the dumplings.
2. In a large bowl, add the self-rising flour. Cut in the shortening with a fork or pastry blender until the mixture resembles coarse crumbs.
3. Gradually add the boiling waterโ€”starting with about 1/2 cup and adding more as neededโ€”until a dough forms.
4. Dust a clean surface with flour and roll the dough to about 1/8 inch thick. Cut into strips, then into squares.
5. Remove the lid from the boiling broth. Add dumpling squares a few at a time, replacing the lid quickly after each addition. Let cook about 30 seconds between each batch.
6. Once all dumplings are added, reduce heat to low and simmer uncovered for about 20 minutes. Stir occasionally to prevent sticking. Season with salt and pepper to taste.
7. Optional โ€“ Drop Dumplings: Instead of rolling and cutting, pinch off small uniform pieces of dough and drop directly into the boiling broth. Simmer until cooked through.
8. Serve warm by ladling into bowls.

Soft & Fluffy Fried Buns โ€“ Perfect Tea-Time Snack!
Crispy on the outside, soft on the inside โ€” these fried buns are easy to make and absolutely delicious. Try them fresh and warm for the perfect treat!
Ingredients
โ€ข ยผ Cup Warm Milk
โ€ข 1 Tbsp Sugar
โ€ข 1 Tsp Yeast
โ€ข 1 Egg
โ€ข 1 Tbsp Oil
โ€ข 1 Cup Flour
โ€ข ยผ Tsp Salt
Instructions
1. In a bowl, mix warm milk, sugar, and yeast. Let it sit for 5 minutes.
2. Add egg and oil, mix well.
3. Add flour and salt, mix to form a dough.
4. Rub a little oil over the dough and cover. Rest for 40 minutes.
5. Take the dough, cut into pieces, and shape as desired.
6. Cover and let them rest for 5 minutes.
7. Heat oil on medium. Fry the buns until golden brown.
8. Serve warm and enjoy!

Spinach and Cheese Puff Pastry Squares
Ingredients:
2 sheets of puff pastry (thawed if frozen)
1 ยฝ cups spinach (chopped and cooked, excess water squeezed out)
1 cup ricotta cheese (or feta for stronger flavor)
ยฝ cup mozzarella cheese, shredded
1 egg (for egg wash + 1 extra for the filling)
Salt and pepper to taste
Optional: Sesame seeds for topping
Instructions:
Preheat oven to 375ยฐF (190ยฐC).
In a bowl, mix spinach, cheeses, 1 egg, salt & pepper until combined.
Roll out one puff pastry sheet on baking paper.
Spread the spinach-cheese mixture evenly on it, leaving space around edges.
Cover with the second puff pastry sheet, press edges with a fork to seal.
Cut into square portions using a knife.
Brush the top with egg wash (1 beaten egg).
Sprinkle sesame seeds on top (optional).
Bake for 25โ€“30 minutes or until golden and puffed.
Let cool slightly, then serve warm.

1 1/2 pounds ground beef
1 package taco seasoning mix
1 bag Fritos corn chips
1 to 2 cups cheddar cheese, shredded
PREPARATION
Brown 1 1/2 lbs ground beef. Mix in taco seasoning and cook according to directions on package.
Layer in a casserole dish in the following order: Fritos chips, meat mixture, shredded cheese. Repeat layers once again.
Bake at 350ยฐF for about 15 to 20 minutes or until cheese is bubbly.
After removing from oven I added more cheese on the top.

Ingredients:
- 4 large onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- 1 bay leaf
- 4 cups beef broth
- 1 cup chicken broth
- 1/2 cup dry white wine (optional)
- Salt and pepper to taste
- 8 slices of baguette or French bread, toasted
- 1 1/2 cups shredded Gruyรจre cheese
Instructions:
1. Melt butter with olive oil in a large pot over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.
2. Add the minced garlic, thyme, and bay leaf. Cook for another minute.
3. Pour in the beef broth, chicken broth, and white wine (if using). Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes. Season with salt and pepper to taste.

Crock Pot Potato Broccoli Cheddar Soup is a creamy and comforting dish thatโ€™s perfect for a cozy meal.

Ingredients
โ€“ 4 tablespoons unsalted butter
โ€“ 1 large chopped onion
โ€“ 2 pods dโ€™ail chopped
โ€“ 4 cups chicken or vegetable broth
โ€“ 4 large potatoes, peeled and diced
โ€“ 3 cups chopped broccoli florets
โ€“ 2 large carrots, peeled and diced
โ€“ 1 cup thick cream
โ€“ 2 cups grated cheddar cheeseโ€“ Salt and pepper, to taste
