Lemon Pepper Chicken with a fresh Parmesan Squash Salad! Absolutely Delicious!!!

This is one of the amazing squash recipes that I received from a very dear friend. We only used one Squash because they are giants.

SQUASH FRITTERS

INGREDIENTS: (US Measurements)
* 5 - Squash (yellow, green or both)
* 1 Cup - shredded Cheddar Cheese
* 1/2 - Onion Chopped
* 1⁄4 - Cup Flour
* 2 - Eggs
* 1 - Teaspoon Salt (to taste)
* 4 - Tablespoon Oil (for frying)

DIRECTIONS:
1. Grate the squash into mixing bowl.
2. Add grated cheese, onion and egg.
3. Mix and then add flour until it is almost a dry mix.
4. Heat Oil in Skillet, once heated drop spoon size dollops of your mixture into oil and flatten them with spoon.
5. Allow to fry until Golden Brown.
6. Remove from oil and place on a tray covered with paper towel to remove excess oil.
7. Sprinkle with salt to taste.
8. Serve as a snack, or with your favorite meal.

Good Morning! A friend said I never do chicken , but I feel like we do it all of the time … here’s your chicken Bruce! I hope you enjoyed it!!! She did some more of the squash fritters and added a touch of jalapeños to them! They were off the chain good, as was the Chicken!
