Celebrated my first solo momma outing for my birthday with a cozy Half Breakfast from Biscuit Head — two eggs over medium, thick-cut bacon, and their famous vegan biscuit with apple spice jam. 🥰

Paired it with a pumpkin spice latte made with almond milk, and spent a little time just watching the world go by out the window. ☕

All the fun of s’mores, minus the campfire (and allergens)! 🔥🍫

Tried the viral Frozen Protein S’mores from .proteinpantry and gave them a dairy- and gluten-free twist — TruWhip coconut cream, Enjoy Life chocolate chips, vegan protein powder, and Kinnikinnick GF graham crackers for the win.

They’re so good, I might need to make a second batch before the weekend’s over! Save this recipe for later — your future self will thank you:

Dairy and Gluten-free Ingredients:
1 package of Kinnikinnick GF graham crackers (8 oz)
1 cup Enjoy Life chocolate chips
1-2 tsp coconut oil
8 oz container TruWhip coconut cream whipped alternative
1 scoop vanilla (or unflavored) vegan protein powder
1-2 scoops of unflavored collagen powder (optional, but another good protein addition!)

Instructions from Jaycee:
1. Line a sheet pan with parchment and make sure there’s a space in your freezer where it fits. Add ~5 graham cracker sheets to the pan with the sides touching.
2. Microwave chocolate chips and coconut oil in 30-second intervals, stirring in between, until melted (I usually need 60 seconds total). Pour and spread evenly over the graham crackers, then place them in the freezer to set.
3. Meanwhile, add protein powder to the whipped topping alternative and stir until smooth. Spread evenly onto the hardened chocolate layer and top with the remaining graham crackers, leaving a small space between them to facilitate cutting.
4. Freeze at least 1 hour before cutting into bars and enjoy!

Family dinner = handled! 🥳🙏

We grabbed the Family Meal Deal from this week, and it was a total win. Their signature Peruvian rotisserie chicken was perfectly seasoned (as always), served with sides like cilantro rice, Peruvian corn salad (minus the cow’s feta), and those craveable plantains we can never resist. 😋

Don’t miss tacking on some of their signature juices like the Maracuya (passionfruit) or herbal limeade!

It’s such an easy way to feed a crowd without lifting a finger — and perfect for busy weeknights. Bonus: their holiday menu is just around the corner, and if it’s anything like this, we’re in for a treat! Check out my story for ways to order that coming up and screenshot it for reference.

New Belgium Brewing checked all the boxes: outdoor seating, great food, and a front-row seat to the French Broad River.

Jamie grabbed a beer, we snacked on Smokee’s wood-fired pizzas, and the tubers drifting by provided the best kind of lazy-afternoon entertainment.

Babymoon mornings call for cozy cafes, and Abeja’s House Cafe was exactly that. ☕

Jamie went straight for the special (a chorizo hash), while I tucked into a breakfast sandwich with spinach, peppers, and pork sausage on vegan sourdough — plus a mountain of roasted potatoes! 😋

Extra love for their gluten-free and allergy-friendly menu! The staff was super sweet and attentive, nothing but locals in here when we visited (so we knew we found a little gem).

Evening stop at Barley’s in Asheville for a little taste of “home.” 🎱

We played plenty of pool at their Greenville location, so it was the perfect low-key night out on our babymoon.

Nothing says “babymoon kickoff” quite like tacos in the mountains. 🌮

White Duck Taco has been a long-time favorite, and we love how their creative flavor combos and easy substitutions make it such an effortless, delicious stop before diving into the rest of the city.⁠ Fresh tacos, fun combos, and a table just big enough for Jamie, me, and one very curious Baby Bean. ⁠

Pictured here are the Bangkok Shrimp, Crispy Chicken BLT, and the Bahn Mi Tofu tacos (clockwise from the top). I forgot to snag pics of Jamie’s tacos, but he chose the Steak & Cheese, Bangkok Shrimp, and the Spicy Buffalo Chicken!
