Nostalgic snacks, but make it allergen friendly 🙌

I had a hankering for a rice crispy treat, but I wanted to make sure both Mom and I could eat it. That meant finding a gluten-free certified rice cereal brand, and a marshmallow cream or marshmallows that did not have fake vanilla extract or other allergens present.

Allergen-friendly Rice Crispies recipe:
- ~8 cups (or ~one and a half boxes) of Sprouted Brown Rice Crisps
- ~15 oz (Just shy of two containers) of Marshmallow Creme
- 4 Tbsp of butter (we like Country Crock's vegan butter with avocado oil)
- 1 Tsp of vanilla extract
Optional toppings: Cinnamon, sprinkles, or chocolate chips (we love )

Step 1: Place parchment paper on the bottom of a 13" x 9" pan and spray with avocado oil to avoid sticking.
Step 2: Add the butter to a pot and simmer on medium low heat until the butter is melted, about 1 to 3 minutes. Then add in the marshmallow cream and stir constantly until they are fully combined, about 3 to 5 minutes. Turn off the heat and stir in the vanilla extract.
Step 3: Quickly pour the cereal into the marshmallow mixture and stir until everything is combined, then pour into the prepared 13" x 9" pan.
Step 4: Press down with a wooden spoon or silicone spatula to make sure that the marshmallow cream and rice crispies are compacted into the pan. Add any toppings you'd like at this point (we did cinnamon and semi-sweet chocolate chips). Chill for best results!
Step 5: After chilling for about 30 minutes to an hour, you can take the rice crispies out of the fridge and score them to help take them out of the pan easier. This lasts for about a week in the fridge!

It's the most wonderful week of the year (a.k.a. Restaurant Week)! 🍽️

For the last 15 years, two times a year in January and August restaurants in the South Carolina restaurant Association participate in this awesome weeklong event with plated courses, curated tasting menus and more! This is one of the best ways to try a new restaurant you haven't been to before or try multiple different things for a great price from some of your favorite restaurants.

I know, our rule is no duplicate Restaurant Week places we've been to before. However, we can't say no to Keipi! It's one of our absolute favorite for both for allergen friendliness, atmosphere, and delicious food! It's a great place to take bigger groups of friends.

Their Restaurant Week menu is $40 for a starter, entrée, dessert, and a drink. I chose their tomato cucumber salad, Khinkali (lamb soup dumplings), and Zgapari (chocolate layered cake) that Jamie had when we got home. I had the mocktail version of their Fizzy Sea drink, which was delicious!

Carrot cake makes the best (birthday) cake 🥕🍰

Jamie's grandma's birthday was this week, and the one thing I distinctly remember her telling me from the few times I met her was how much she loved carrot cake (that matched what used to be her auburn hair).

I had carrots, dates, and tahini (or sesame seed) paste in the fridge to use up, so I tried something different and made this recipe from Yossy Arefi (from a collab SubStack post with her and Ali Slagle). Check out the full recipe here! https://alislagle.substack.com/p/tahini-carrot-cake

The only change I made to this to make it more allergen friendly was subbing out the sour cream for nondairy/sheep's milk yogurt. I haven't tried making this gluten-free, but next time I will! I can imagine it will be just as moist and delicious with gluten-free flour.

Date nights look a little different these days 💜

Sometimes, it means putting Beanie in her high chair and taking her with us while she waves and tries to make friends with everyone in the restaurant. 😅

So glad that the staff and other patrons at were so sweet and accommodating with not only my allergies but also our new little restauranteur.

Pictured here are their Pork lo mein, shrimp rolls, and Lieu’s Spicy Chicken, all of which were delicious.

Sometimes the best thing on the menu is good company. ☕💜

Last week, I had the chance to meet up with some new mom friends at Methodical Coffee, and it was exactly what my heart needed.

My order included a Chai tea with oat milk and a yummy gluten-free and dairy-free blueberry cornmeal muffin.

Great coffee, delicious allergen-friendly options, and even better conversation. Here's to finding community one coffee date at a time!

Fresh seafood, handcrafted cocktails, and a relaxed atmosphere? Count us in. 🌊🍋

Our latest Greenville date night took us to , where every bite was packed with flavor. Highlights included the citrusy "Shadows on the Sea" cocktail, fresh (gluten-free)! Shrimp Ceviche, shareable Abyss Nachos, and a perfectly crispy chicken sandwich for Jamie.

It's always a win when we discover new restaurants with thoughtful allergen-friendly options that don't compromise on taste.

Another coming your way 😋

We recently tried this recipe from for a "Yeast Cake with Fruit and Streusel".

We wanted to try something different to use up the blueberries and blackberries we had for my garden, and this was a fantastic recipe!

It was super easy to make dairy free, and the only thing I made was including orange instead of lemon zest in the dough/crust, which worked beautifully with the blueberries. The flavors were super spot on!

This is what birthdays look like when you recipe test for fun 🥳

I can't believe our little Beanie will be a year old next month. Truly can't fathom how fast and slow time has gone. 🥹

So naturally, I started recipe testing for the perfect birthday cake option for her big day! Each cake included two frosting options, all allergen friendly, of course.

The first two columns are a strawberry cupcake, the third and fourth columns are a date cake (gave us gingerbread vibes), and the bottom rows are a banana blueberry cake. The two frostings we tested included a yogurt-based glaze and a whipped coconut cream frosting. The coconut whipped cream date cake combo was the winner! 🙌

We also started testing out brands for dye-free frosting colors. I made a royal/ornamental frosting using food colors and they turned out great! I'm going to try out Naturals to make another red, blue, and green but I'm really happy with how this test batch turned out in terms of color variety.

It’s back to our easy faves this week for dinner, with a seafood twist 🍤

We love making “leftover fridge” nachos (I have an official recipe for it on the blog using pulled pork), but it’s basically - top chips with cheese, bake for 7 mins until the cheese melts, top with whatever meat, veg, etc. you need to use up in your fridge, add more cheese, bake for another 10 mins and viola! 👏😋

This time, we made refried beans, sautéed shrimp in a chipotle in adobo sauce, a goats cheese béchamel sauce (instead of just melted cheese), and some avocado to top. I keep forgetting how awesome a béchamel is on nachos! I need to use it more often.

Dani Mathews made me try it! 👏🧀

I’ve had my eye on checking out The Cheese Wheel for new sheep and goats cheeses, and a recent nail appointment next door at Freecoat Nails was the perfect opportunity to pop in! I watched Dani’s video about charcuterie picnics recently so it was top of mind when we had time after lunch to stop by.

The whole team was soo helpful in picking out what cheeses worked with specific cooking methods or dishes, and being allergen friendly with numerous sheep, goats cheeses, and gluten free items to pair with boards too.

Michael (the owner from Hartford, CN) and his mom run the shop along with their team, who also had great suggestions about what to take with us to make our own cheese board at home.
