Lemon Curd (Stovetop) 🍯
Silky, rich lemon curd — spread it, spoon it, swirl it into yogurt.
Ingredients:

3 eggs

1/2 cup lemon juice

2/3 cup sugar

Zest of 2 lemons

4 tbsp butter

Instructions:

Whisk eggs, sugar, lemon juice, and zest in a saucepan.

Cook over medium, stirring, until thickened.

Stir in butter off heat. Chill before serving.

Raspberry Puff Pastry Bites
Ingredients:

1 puff pastry sheet

3 tbsp raspberry jelly

2 tbsp brown sugar

Instructions:

Preheat oven to 375°F. Roll pastry to a rectangle.

Spread jelly and sprinkle brown sugar.

Fold into palmier shape.

Slice and place flat on baking sheet.

Bake for 15 mins or until golden.

Classic February Birthday Cake (Original)
Ingredients:

8 large eggs

2 cups sugar

2 ½ cups all-purpose flour

1 tbsp baking powder

1 tsp salt

1 cup whole milk

¾ cup butter

1 tbsp vanilla extract

Pink buttercream frosting

Edible glitter or pink sprinkles

Instructions:

Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

In a stand mixer, beat eggs and sugar until thick and pale.

Sift together flour, baking powder, and salt.

Heat milk and butter in a saucepan until just melted.

Gradually add dry ingredients to egg mixture, alternating with warm milk-butter mixture. Stir in vanilla.

Divide batter into pans and bake 30–35 min. Cool completely.

Frost with pink buttercream and decorate with edible glitter.

Eggplant Protein Nachos
A unique and healthy twist on nachos using roasted eggplant slices as the base.
Ingredients:

1 large eggplant, sliced

1/4 cup black beans

1/4 cup shredded mozzarella

Salsa and avocado for topping

Instructions:

Roast eggplant slices until tender.

Arrange eggplant slices on a tray, top with beans and cheese.

Bake at 375°F for 10 minutes.

Top with salsa and avocado.

Ingredients:

1 cup almond flour

1 1/4 cups powdered sugar

3 egg whites

1/4 cup granulated sugar

1/4 cup freeze-dried raspberries (powdered)

Lemon buttercream for filling

Instructions:

Sift powdered sugar, almond flour, and raspberry powder together.

Whisk egg whites to soft peaks, then add sugar and whisk until stiff peaks form.

Fold in the dry ingredients.

Pipe circles onto a baking sheet and let rest for 30 minutes.

Bake at 300°F for 18 minutes.

Fill with lemon buttercream once cooled.

1/2 cup sesame seeds

1 1/2 cups flour

1/2 tsp baking soda

Instructions:
Preheat oven to 350°F. Mix together butter, tahini, honey, and sugar. Add flour, baking soda, and salt. Fold in white chocolate chips and sesame seeds. Bake for 10-12 minutes.

Boil and toss in butter sauce.

Making homemade chocolate from cacao nibs is no easy feat! Grinding and mixing takes patience, but once you get that smooth texture — it’s totally worth it.

What You’ll Need:

1 cup cacao nibs

1/2 cup powdered sugar

1 tbsp cocoa butter (optional)

Pinch of salt

How to Do It:

Roast cacao nibs at 250°F for 10–15 minutes.

Grind the nibs into a paste with a high-speed blender or food processor.

Stir in sugar, cocoa butter, and salt, and blend until smooth.

Let it cool, temper the chocolate, and mold into your favorite shapes.

No-Bake Edible Cookie Dough
When you're craving cookie dough but don't want to bake, this no-bake recipe is perfect. Sweet, creamy, and full of chocolate chips, it's everything you want in a cookie dough!
Ingredients:

1 cup all-purpose flour, heat-treated

1/2 cup butter, softened

1/4 cup brown sugar

1/4 cup granulated sugar

1 tsp vanilla extract

2 tbsp milk

1/2 cup chocolate chips

Instructions:

Mix butter and sugars until smooth.

Slowly add in the flour and vanilla.

Stir in milk until dough reaches desired consistency.

Add chocolate chips and mix well.

Chill or eat immediately!

Cottage Cheese Breakfast Casserole
Ingredients:

1 cup thick curd cottage cheese

1/2 cup diced ham

2 cups shredded hash browns

1 cup shredded cheddar cheese

4 eggs

Instructions:

Preheat oven to 350°F (175°C).

Layer hash browns, cottage cheese, ham, and shredded cheddar in a baking dish.

Whisk eggs and pour over the casserole.

Bake for 25-30 minutes.

Miniature Cannelés with Whipped Vanilla Filling
Prepare the batter the night before:

1 vanilla bean

2 cups milk

2 tbsp butter

2 eggs

1 cup sugar

Pinch of salt

¾ cup flour

1 tbsp rum

Simmer milk with vanilla bean. Let it infuse. Whisk eggs, sugar, and salt. Add flour, then melted butter. Slowly pour in warm milk and stir in rum. Refrigerate overnight.

Baking instructions: Butter molds, fill them, and bake for 10 minutes at 400°F. Reduce to 375°F and bake for another 45 minutes.

For the vanilla cream:

100ml cream

50g mascarpone

2 tbsp powdered sugar

Whip until stiff.

To serve: Flip cannelés, scoop out the center, and fill with cream.
