Had a lot of windshield time yesterday. First we went to Winnemucca to finalize paperwork for a large square baler, then it was off to Jiggs with a couple of mares to get bred. Things are ramping up around here, with hay season kicking off next week!

Our last calf of spring calving made his arrival 2 days ago. Him and mom got a little extra alone time before moving to the pasture today. This wraps up our 4th calving season as first generation ranchers. I’m so proud that all 4 seasons have had 100% calf survival rate! God is good!

We had a lot of questions this weekend about our Picanha Roast and Coulette Steaks, so I figured I’d do a post on them! These are unique cuts, you don’t see too often in the grocery store and we love that our butcher offers them. Picanha and Coulette are the same cut! They come from the top Sirloin cap (biceps femoris) sometimes on the Coulette the fat cap is removed, but you will find it in-tact on our steaks. The Picanha is such a versatile cut, you can cook it similar to a Tri-Tip by reverse searing, or you can slice it and make your own Coulette’s (as I did tonight). We have both in stock, on our website; hurry and try out this unique cut!
