The Erroll Garner Project stands with our African-American brothers and sisters who are under attack by racism and violence at the hands of the police across America. This is not new to the black community. This is the history of the U.S.
This is part of the exploitation that has always been what black artists have faced.
We work to preserve and support the legacy of Erroll Garner but more broadly the music and musicians in Jazz which is rooted in the profound depths of black music and history and is part of the resistance to slavery, segregation, Jim Crow, and now white supremacist violence.

HEATHER & THE HIGHLANDS RECIPE OF THE WEEK

CHICKEN WITH ALMOND RICE

1 CUP UNCOOKED RICE
1 CHICKEN CUT INTO PIECES
½ CUP GROUND, BLANCHED ALMONDS
1 TBSP BUTTER
1 TSP SUGAR OR TO TASTE
¼ TSP GINGER
1 TSP SALT OR TO TASTE
1 TSP CARDAMOM
3 TBSP SLIVER ALMONDS, LIGHTLY BROWNED IN BUTTER

Rinse rice in water; drain. Cover with cold water and leave to soak. In another pan, cover the chicken pieces with salted water and let simmer over low heat for 1 hour. Skim off fat and measure 3 cups of broth into a separate saucepan. Add the ground almonds to the liquid and let steep for 10 - 15 minutes. Drain the rice and cook it in the broth until tender. Remove the skin and bones from the chicken and cut meat into bite-size pieces. Add chicken to rice mixture along with the butter, sugar, ginger, salt, and cardamom. Cover and cook over low heat for around 15 minutes or until the chicken is completely heated. To serve, garnish with the slivered almonds.

HEATHER & THE HIGHLANDS RECIPE OF THE WEEK

COCK-A-LEEKIE

1 4 lb chicken
12 cups water
6 leeks, trimmed and cut into 1 inch pieces
¾ cup uncooked rice
2 tsp salt or to taste
1 ½ lbs pitted prunes
½ cup chopped fresh parsley

Wash the chicken thoroughly and put into a large soup pot. Pour in the water and bring to a boil. Add the leeks rice and salt. Cover and let simmer for 2 hours. Add the prunes and let it simmer for another 40 min. Remove from heat and lift out the chicken. When the chicken has cooled enough to touch it skin the chicken and cut the meat into bite-sized pieces. Return the meat to the soup and adjust seasoning if needed. Sprinkle with parsley before serving. For good luck, make sure that you have given each bowl at least one prune.

HEATHER & THE HIGHLANDS RECIPE OF THE WEEK

MUSHROOM AND SCALLOP PIE

8 scallops
1 cup milk
½ tsp sea salt; or to taste
¼ tsp pepper; or to taste
2 tbsp butter, divided
1 tbsp flour
¼ lbs mushrooms
5 tbsp cooking sherry
3 cups cold mashed potatoes
1 tbsp parsley

Cut the scallops in half, simmer with milk, salt, and pepper for 15 min. Strain reserving the milk. Melt 1 Tbsp butter in a saucepan; add flour and mix well. Gradually stir in milk until smooth. Add mushrooms, sherry and scallops. Pour into a baking dish; cover top with mashed potatoes. Dot with remaining butter and bake at 350 for ½ hour. Garnish with parsley.

MAKE MOM A GAELIC BREAKFAST IN BED FOR MOTHER’S DAY THIS YEAR!

TOSSED EGGS WITH SHALLOTS

3 SHALLOTS, CHOPPED
¼ CUP CHOPPED BELL PEPPER
2 TBSP BUTTER
4 EGGS, BEATEN
¼ TSP MARJORAM
¼ TSP DILL WEED
¼ TSP THYME
PINCH OF CAYENNE PEPPER
SALT AND PEPPER TO TASTE
⅓ CUP CHEDDAR CHEESE, SHREDDED

Saute shallots and bell pepper in butter over medium heat until soft. Combine eggs, marjoram, dill weed, thyme, salt, pepper, and cayenne pepper. Wisk until fluffy. Pour mixture into the pan with shallots and bell pepper. Blend in cheese. Scramble over medium heat until done, stirring frequently.

1. Make a Coupon Booklet
Make Mom a coupon booklet filled with things you can do for Mom. Make coupons like - clean your room, foot rub, do the dishes, make breakfast, weed the garden. Put the coupons on pieces of paper and staple them together. Then Mom can redeem them whenever she wants.

2. Make a Paperweight
Just go outside and find a sizeable rock, srub it with soap and water, let it dry completely then use markers or paint to decorate the rock for Mom! If you have some felt or fabric you can glue that to the bottom of the paperweight so it won’t scratch surfaces. You can write Happy Mother’s Day on it or another message Mom would like. Every time she sees it she’ll smile and think of you.

TRIPLE CITRUS CURD
For use as a filling for tart shells, cakes, jelly rolls, creampuffs, or spread it on scones or toast.

½ CUP BUTTER
1 CUP SUGAR
2 TBSP LEMON JUICE
2 TBSP LIME JUICE
2 TBSP FRESH ORANGE JUICE
2 TSP LEMON ZEST
2 TSP LIME ZEST
2 TSP ORANGE ZEST
5 EGGS BEATEN

Melt butter in a saucepan over medium heat. Remove from heat and add remaining ingredients. Return to medium heat and cook, stirring constantly, until mixture starts to bubble - do not boil. Cool quickly by setting the pan in a bowl of ice and stir for several minutes. Cover and refrigerate overnight.

HEATHER & THE HIGHLANDS RECIPE OF THE WEEK

RICE CUSTARD

1 CUP UNCOOKED RICE
2 CUPS MILK (WHOLE MILK IF POSSIBLE)
½ CUP SUGAR
¾ TSP VANILLA
⅛ TSP SALT
DASH OF CINNAMON OR NUTMEG
BROWN SUGAR AND CREAM

Soak rice in water overnight. Drain and place in a pie dish. Preheat oven to 350 degrees. Combine milk and sugar in a saucepan; heat to near boiling, stirring until sugar is dissolved. Remove from heat and add vanilla and salt then pour over rice. Sprinkle with cinnamon or nutmeg. Bake for 1 ½ hours or until a light crust forms on the surface. Serve while still warm with brown sugar and cream.

MOMMA SANDY’S EASTER MENU RECIPES

CHOOSE YOUR OWN MENU

INCLUDING A COUPLE APPETIZERS, 1 PROTIEN, 2 VEGETABLES, 1 STARCH, 1 HOT BREAD, AND 1-2 DESSERTS

Appetizers (pick 2)

Deviled eggs
Crab Dip Simple: Imitation crab meat, cream cheese. Salsa. Tsp of garlic powder serve on ice
Cheese Ball package cream cheese, one cup shredded cheddar, garlic powder, 2 tsp chilli or taco season. Roll into ball and roll in season again mixed with nuts and serve with crackers
Simple veggie tray with homemade Ranch don’t forget the olives little fingers love them + Mazios ranch dressing and pickles

Protein (pick one)

Spiral Ham with ginger glaze
add cloves for earthy flavor
add rosemary for fragrant floral flavor
Pork Loin
with rub if ham is too pricey
Ham Steaks
with glaze if ham is too pricey

Vegetables (Pick 2)

Green Beans with bacon

Green bean casserole

Peas in a cream sauce

Chocolate Pie
Butter Pecan Cake with Burnt Butter Icing

Recipes

Ginger Ham Glaze
1 cup honey
2 large tablespoons course mustard
1 can ginger ale
Splash of vinegar
Boil down a bit
Can add cloves
or touch of rosemary (can overpower easily)
If no honey use maple syrup

Spread over ham and cook in oven cooking bag ( Dollar Store has them)

Scalloped potatoes
4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 ½ cup milk
1 teaspoon salt
½ teaspoon pepper
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
½ cup cheese to sprinkle on top
Paprika to sprinkle on top optional
Directions in a small sauce pan melt butter and blend flour Cream Sauce
Salt and peppers
Cook for just a minute then add cold milk stir with whisk
(this basic cream sauce very versatile add a touch of white wine)
Cook till boiling then add cheese
Place ½ of potatoes into greases baking dish ( butter or spray) pour half of cheese sauce over repeat. Top with cheese and paprika Bake 1hour 350

Ham I’m a baking bag girl
Spirals are usually Shank cut hams they are precooked and easy to over cook
IN cooking bag only about 20-25 min at 350
Already sliced just cut at the bone to release slices.

Butt Shank Hams have denser meat and better flavor but still easy to over cook if precooked.

Hams that say FRESH are not cooked just cured and must be cooked to internal temp 160 same prep in cooking bag. Do need to score top of fat cap and cook cap side up 7-8 pounds takes about 4 hours at no more than 325.
Good with Sage Thyme and Oregano or a can of pineapple and brown sugar pack the top fat. If you don’t have Bacon for your green beans some of this fat cap works great. Just cut a hunk of the bottom and cube to put into beans.

Ham Steaks are cheap and are precooked for small groups work perfect and you can just gill or fry a bit in pan. Awesome with ginger glaze. One serves about 4

Pork Loin with is not smoked is awesome too just add a bit of liquid smoke on top and use whichever glaze or rub and back low an slow. Rosemary great on this. 325 for 3 hours

Mamma Sandy’s Green Beans
20 people recipe
3 large cans of green beans
1 onion cut up small (people think they don’t like it but they do)
Salt and Pepper generous on the Pepper
4 slices Bacon and a large tablespoon of bacon grease if you have it
( can use ham fat if no Bacon) cut Bacon into small pieces
Cook until tender some families like cooked down a lot some like just tender
1 tablespoon of sugar about ½ way till done. I know sugar??? Grandma does it.

Wild Rice Side. This stuff is awesome and super simple 1 box 4-6 people
1-2 boxes Uncle Ben Wild Rice. Cook to directions
1 cup Pecans in 3 tablespoons of butter lightly browned in small skillet pecans should be slightly toasted. Pour warm pecan over rice just before serving.
(optional Add two handfuls of fresh spinach at end while rice is setting or add a handful of small chopped sweet potatoes, butternut squash)

Green Bean Casserole. 3-4 small cans green beans
Simple Cream Sauce recipe add 2 tsp garlic powder. Add mushrooms canned or fresh. Mix all together and bake about 30-40 if you don’t have canned onions for top us bread crumbs, butter and parmesan cheese. Can add a can of mushroom soup with a little milk if desired.

Creamed Peas
Frozen peas are best for this but canned will work.
Prepare Cream Sauce without cheese in scalloped potatoes recipe. Use whole milk or canned.
Salt and Pepper again pepper is good on peas.
If you have a lemon a touch in the cream sauce is delicious
Again touch of sugar use can use splenda just do it at the end.

If adding new potatoes or regular boil them first then add to pea mixture.
Otherwise peas overcook.

Hot Rolls
Easy peeezy buy frozen
Baking dish glass is ok but have to really watch not burning while baking
Night before:
Grease baking dish I use Crisco but oilive oil of vegitable oil will work place frozen rolls in dish and cover with plastic wrap . Put in frig to thaw. In morning take out to let rise. Bake at 350 for around 20-25 min. When take out of oven
Rub or brush butter on top.

Beer Bread (No Yeast )
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
¼ cup honey
1 bottle beer 12 ounce
¼ cup butter
Pour ½ of butter in bread baking dish brush or roll around edges.
Stir together flour, baking powder, and salt slowly pour beer and honey mix easily just to combine. Pour into pan and brush remaining on top
Bake 40-50 min at 350 till toothpick comes out clean. This can also be baked in
Muffin pan.
You can add garlic powder and cheese for a Red Lobster style. Rosemary also lovely. Serve hot

Kentucky Angel Biscuits. These babies are awesome. Mix up and store in frig
5 cups flour
1½ tsp baking powder
1tsp baking soda
1 tsp salt
5 tablespoons sugar
¼ cup warm water 110 degrees F ( Hot tap)
2 packages yeast
1 cup salted butter ( can split with Crisco)
2 cups buttermilk
“bloom the yeast” in small bowl mix yeast and hot water and 2 tablespoons sugar let sit will bubble.
Sift flour, baking powder, soda, salt and 3 tablespoon sugar. With your hands lightly break down butter into flour mixture. Can use a fork or a pie crust cutter.
Turn onto a flour board and make a well in center. Pour yeast and buttermilk a bit at a time pulling flour from sides. When all mixed Knead with hands for a minute or two. Don’t panic just helps flour and yeast to work together. You can press out now or place in frig and press out later. 1 to 1 1/2 inches thick then fold over and press again . Cut out and bake on greased cooke sheet. When placing touch one to another this helps in rising. Let rise for about 40 min. Cover with tea towel. Bake 18-20 min brush with butter and serve hot.

Deviled Eggs

Boil a dozen eggs in water with 1 tablespoon baking soda shells will come right off. Time for 10 minutes after water boils hard. Cool in cold water and ice.
Peel, Cut in two and remove yolk into separate bowl.
Into bowl with yoks.
2 tablespoons mayonnaise start with one then add if too dry.
1 tablespoon mustard
½ tsp curry powder (option )
Salt and pepper
A few pickles cut up supper small or relish
Vinegar to taste about 2 capfulls. Or pickle juice if no vinegar
1 tsp sugar.
Mix and put into plastic bag or spoon into eggs white 1/2s sprinkle with paprika Many options can add pimentos, bacon, olives, fresh dill or basil.

My daddy’s favorite
( Secret is adding eggs in late and whisking)

2 tablespoons corn starch
2 tablespoons cocoa ( can use baking chocolate melts or choc chips melted)
1 tablespoon flour
2 cups sugar
2-3 eggs beaten with fork
3 ½ cups milk
1 teaspoon salt.
1 teaspoon vanilla
3 tablespoons butter.

In heavy saucepan cornstarch, cocoa, flour, sugar, salt. Cook on low till milk is hot
But not boiling. In mixing cup take ½ cup of milk and 2-3 eggs and whisk together.
More eggs richer pie. Pour egg mixture into hot milk stir with wisk until make cow eyes. Yes cow eyes gentle bubbles that plop when you stir. Add butter, vanilla , and a tablespoon or two of sugar and stir . cool with plastic wrap place down onto pudding this keeps from forming thick skim. pour into baked pie shell
Or over crushed cookies, graham crack crust, or just serve as a pudding. Top with cool whip or fresh whipped cream or meringue . You can use box pudding mix follow directions but leave out a bit of milk and do eggs, vanilla, butter, Sugar free
Also good no body and tell the eggs and butter richen it.

Butter Pecan Cake with Burnt Butter Icing
Prepare Butter Pecan Cake mix like directions but add an egg if you have plenty
Burnt Butter Icing: 3 tablespoons butter in small skillet let cook till brown almost
Burned got to watch it. Set a side.
3 cups powderd sugar
1 pkg of cream cheese
1 tsp salt
1 tsp vanilla.
Pour in butter and whip into icing if to thick add a touch of milk. A cap full at a time. Top cake with walnuts or pecans if desired. This icing is also awesome on banana cake. If you want to fancy up cook cake in 2 layers.

94.7 KPIP is a low powered FM station located in Fayette, Missouri and serves Howard County. KPIP is a non-profit, educational radio station. No one gets paid to work at the station as we are all volunteers. Our format is half talk and half music.

We feature almost every genre of music out there. From Jazz to Classical and from Celtic to Country. We also feature locally produced music and talk shows and, in addition, carry several well respected syndicated shows like “Democracy Now.”
