Years ago, I tried to write down my mom’s legendary skordalia recipe.
I wrote “Mom’s Skordalia” at the top and started asking:

“How many potatoes?” — “As much as you need.”
“How much vinegar?” — “Until it tastes right.”
“How much salt?” — “Taste and see.”

In the end, the page stayed blank — just the title. I’ve kept it in my recipe book ever since, a reminder that Greek cooking is all about instinct, not measurements.
