What does comfort food mean to you? Mei and I were watching The Great American Recipe on and one of the episodes was a challenge about comfort food. Comfort food to me is a dish that brings comfort, which is usually a soup, and one that brings me back to my childhood and time spent with my grandma. That’s seollongtang, aka Korean ox bone soup, for me. You can also find out what comfort food the contestants of The Great American Recipe Season 2 made by streaming on the PBS App! Seollongtang Yield: 4.5 Qt of soup Ingredients: - 4-6 lbs beef bones - 5 lb brisket - Somen noodles - Sliced green onions - Salt and black pepper (season to taste) - Kkakdugi (cubed radish kimchi) 1. Soak the beef bones and brisket in water for at least 1 to 2 hours, then drain. 2. Place the beef bones into a large stock pot and fill it with enough water to cover the bones. Bring the water to a boil and simmer for about 15 minutes or until the impurities float to the top. Drain the bones and wash with fresh water to remove leftover impurities. 3. Place the beef bones back into the pot and add enough water to reach about 3 to 4 inches from the rim of the pot. Bring the water to a boil then add the soaked brisket. 4. Reduce the heat and keep the soup at a medium simmer for 2 to 2.5 hours. Remove the brisket into a heat proof container. Cover with cling wrap. Allow it to cool before refrigerating. 5. Continue simmering the soup for another 6 to 8 hours, until the soup is white and milky. Refill with more water whenever the soup is below half. For the last refill, allow the soup to simmer and reduce until about 4 to 5 quarts of soup remain. 6. Remove the bones and strain the soup into a heat proof container. Let the soup cool before covering and refrigerating overnight. 7. Skim and discard the solidified fat on top of the soup. 8. Boil somen noodles according to package instructions. Drain and rinse with cold water. Also thinly slice the brisket against the grain. 9. Add seolleongtang into a pot and bring to a boil. 10. Add the somen noodles, sliced brisket, and sliced green onions. Remove from heat and season with salt and black pepper.

While watching season 2 of The Great American Recipe on , I was reminded of the first dish I ever made. It was this Creamy Chicken Alfredo. This dish is special to me, not only is it because it’s the first dish I ever cooked. It was also the first dish I made for my parents. Creamy Chicken Alfredo: Yield: 2 servings Ingredients: - 1 chicken breast, halved - 1/2 tsp salt (or to taste) - 1/4 tsp black pepper (or to taste) - 1 1/2 tsp Italian seasoning (or to taste) - Oil, as needed for cooking - 8 oz dry fettuccine pasta - 4 TBSP unsalted butter - 1 1/2 TBSP minced garlic - 1 1/2 cup heavy cream - 3/4 cup grated parmesan cheese - 1/3 tsp salt (or to taste) - Generous dash of nutmeg - Chopped parsley (optional for garnish) Instructions: 1. Bring a pot of water to a boil and cook the pasta according to package instructions. Drain and set aside. 2. Season the chicken breast with salt, black pepper, and Italian seasoning. 3. In a sauté pan over medium high heat, add enough oil to coat the pan. When the oil is hot, sear the chicken breast halves until golden brown and cooked through, about 3 to 4 minutes per side. Remove from pan and set aside to rest. 4. Using the same pan, reduce the heat to medium and add the butter. Once the butter is hot and melted, add the garlic and sauté until fragrant. Make sure to scrape the fond too! 5. Add cream and bring the sauce to a simmer. Stir frequently. 6. Stir in the grated parmesan and season with salt and nutmeg. 7. Add the cooked fettuccini to the sauce. Allow the sauce to simmer and thicken until it coats the pasta or to your preferred consistency. Stir constantly. 8. Top the alfredo with the pan seared chicken and enjoy while hot!

Bang Bang Shrimp are so addicting! Golden fried shrimps tossed in a spicy mayo and perfect with Bibb lettuce! Wafu Dressing Yield: 3 to 4 servings - 1/3 cup Mizkan Rice Vinegar - 1/3 cup light sodium soy sauce - 1/3 cup neutral oil - 3 TBSP honey or your preferred sweetener - 2 tsp grated ginger - 2 tsp toasted sesame seeds (optional) Add all of the ingredients into a jar and tightly seal the lid. Shake vigorously until the vinaigrette is emulsified. Salad in a Jar: - Cherry tomatoes - Cucumber - Red onion - Carrots - Greens (mix of chopped romaine and spring mix) - Pan fried tofu or your preferred proteins Feel free to substitute any of these salad components for ones you prefer. Arrange the salad components into a 36 ounce jar starting with the dressing and then by hardiness (usually the protein and finish with greens).
