Nothing says a home cooked meal more than a cheese crusted pan of macaroni and cheese. I prepare macaroni and cheese at least three different ways. There’s the old school version layered with mild cheddar cheese, topped with extra sharp cheddar and a mixture of milk and eggs (I know 🙄everyone doesn’t add eggs), salt, pepper, butter and a pinch of sugar in the milk mixture. Then there’s the version with a smooth creamy cheese sauce adding in some Gouda, and finally a quick stove top version with the same basic ingredients as the first.

This week, I decided to break in one of my new enameled cast iron pans with some baked macaroni-n-cheese. As I bit into this southern nostalgia fresh out of the oven, it reminded me of my late Godmother Ollie’s sister, Pastor Virgie Scott, who would often prepare the best macaroni-n-cheese for Sunday dinner when I spent the day with them. I don’t prepare comfort food like this as often anymore, with the exception of holidays. I will definitely have to freeze some of this considering I thought this would be a small serving lol. Also, I got a little carried away with the butter 😊. I’m so accustomed to cooking for a large group of family and friends. And the meal wasn’t complete without more down home favorites: smothered baked chicken and green beans. What’s your favorite version of macaroni-n-cheese?
