Salad🥗 made with Cucumber🥒, Celery🎋, Carrot🥕, Onion🧅, Cilantro🌿
Homemade dressing🫗: Grated garlic, lime juice, salt, pepper, red pepper flakes, raw sugar, extra virgin olive oil - mixed really well until the oil gets emulsified and isn’t just floating on top.

👩🏻‍🍳
Tomato Rice🍅🍚
•Oil+Ghee, cumin seeds, shahi jeera, bay leaf, cinnamon, cardamom, cloves, black peppercorns, javitri(mace), dagad phool(stone flower)
•Onion, green Chilli, ginger garlic, curry leaves, onion, 1½ Tomato, turmeric, kashmiri chilli powder, coriander powder, salt - cook until pulpy.
•Cilantro, Mint, 30min soaked Basmati rice - sauté until coated.
• 1:1½ water, pressure cook for 2 whistles, let pressure drop naturally off heat before opening(If using IP, 1 pressure cooker whistle = 3 IP Mins)

Thai Cucumber Peanut Salad🥒🥜🥗
Ingredients:
Cucumber(thinly sliced with slicer)
Onion (thinly sliced)
Cilantro
Mint
Crushed Roasted Peanuts(add just before serving to retain crunch)

Dressing:
Soy Sauce 2 tsp
Sesame Oil 1 splash
Extra Virgin Olive Oil ½ tsp
Chili Oil + Chilli Crisp 1 tsp
Rice Vinegar ½ tsp
Raw Sugar 1 tsp
Orange Juice 1 squeeze
Garlic 2cloves
Lime Juice ½
Salt
Pepper

👩🏻‍🍳
Shrimp Skewers🦐🍢
Marinade:
Lime Juice
Salt
Red Pepper Flakes
Ginger Garlic Paste
Turmeric
👉Pass skewers through marinated shrimp, spray with oil (1hr water soaked wooden skewers to avoid burning)
👉Bake at 400F for 20mins (10mins on each side) , Broil for 6mins(3mins on each side) - Done🍢

👩🏻‍🍳
Thai Red Curry🇹🇭🌶️🍲
Ingredients:
Avocado Oil
Mushroom
Bell Peppers
Garlic
Onion
Tofu (Optional)

Thai Basil
Coconut Milk
Thai Red Curry paste
Soy Sauce
Sugar
Salt
Pepper

Heat 1 tbsp oil, sauté all veggies & Tofu with salt & pepper in given sequence until 50% cooked(veg should retain crunch in the end) and keep aside

Heat 1 tbsp oil, saute 3-4tbsp of red curry paste until fragrant, add 1 can of coconut milk + ½ can water measured with the same can, mix and bring to boil(takes 5mins) until oil floats on top.

Season with soy sauce, sugar, salt, pepper, add cooked veggies/tofu, bring to boil and simmer on low heat for 8mins, add chopped thai basil, turn off heat, rest for 5mins before serving.

Serve hot with Jasmine rice🍚 sprinkled with toasted sesame seeds🏁 and a side of thai cucumber peanut salad🥒🥜 for that extra fiber & a shrimp skewer🍤 for extra protein😋 - Yum Yum Yum!😋

Simple Soul Food Dinner🧘🏻‍♀️🍛

On the menu🍽️:
• Cauliflower Tomato ⚪️🥦🍅
• Ashgourd Coconut Milk Curry🍈🥥🌿/Boodidha Gummadikaya/पेठा(Petha)
• Aloo Fry/ Potato🥔🌶️
• Tomato Rasam🍅🌿🫗
with Rice🍚, homemade Ghee🧈✨ & homemade Yogurt🤍

Ashgourd Coconut Milk Curry🍈🥥🌿
👉Sauté Ashgourd pieces (no turmeric to keep it white) with tadka just like usual (mustard, cumin, urad dal, chana dal, curry leaves, heing), onion, garlic, green chilli
👉Cook until soft, season with cumin powder, salt & add ½ can of coconut milk + 2 tbsp of freshly grated coconut - cook until thick, cilantro garnish🌿 Done!💁🏻‍♀️
🍽️Serve with Rice🍚 after resting for 5mins.

Tomato Rasam🍅🫗
(Easy Dump & Tadka method)
👉Mix into 3 cups of water, boil on high for 15mins:
1 - 1½ Tomato Chopped
Dry Tamarind ½ Table Tennis Ball size (1 tbsp if you use pre-made paste)
Green Chillies
Salt
Jaggery (small piece)
A little of each:
Turmeric Powder
Cumin Powder
Pepper Powder
Coriander Powder
👉Mash & fish out any big Tamarind chunks, check for salt & sweetness, prepare for round 2 of seasoning.
👉Add sautéed Tempering into Rasam:
Tadka: Oil, Mustard, Cumin, urad dal, chana dal, curry leaves, dry red chilli, heing
Sliced Onion
Garlic
Rasam Powder (about ½ tbsp, store bought)
Cilantro
👉Cover & Boil Rasam for 1min, 🍽️Serve hot with Rice🍚

Prepped all veggies, portioned all aromatics(garlic, onion, curry leaves etc.) so that cooking multiple things at once becomes easy & quick without compromising on taste or texture. As you can see, each specific dish needs a specific cut for the onions & also garlic, which gives optimum results. Make Ahead🫙🗓️ After-School🕓📚 Macaroni Salad🥗 Snack😋

Simple, yet so filling😌 Just pair it with some crispy crackers or freshly cut fruit and you are sorted!👦🏻👧🏻

Things I added:
Cooked Pasta(slightly over-cooked in salted water, cooled down)
Celery
Onion
Cabbage
Carrot
Bell Pepper
Mayo (Avocado Oil based)
Sweet Relish
Mustard
Ketchup
Garlic Powder
Vinegar
Sugar
Salt
Pepper
👉Mix everything, adjust pepper & mayo as you like, refrigerate in an air-tight container.
👉Rest in the refrigerator for at least 1hour before serving. The more it sits, the better the flavor. Stays good for 3 days.
🍽️Serve chilled❄️

Chukkakura Nuvvula Pachadi🌱🌶️( .official ‘s recipe)
👉Dry roast sesame seeds without oil, 3 dry red chillies in 1 tbsp oil - cool down & grind to a powder + salt in a mortar & pestle.
👉Fry oil + cumin seeds + onion + chukkakura leaves(washed twice, chopped small) until super soft, mash with spatula until smooth paste(no need to grind)
👉Add the sesame powder, into the cooked chukkakura & mix well while still hot in the same pan.
👉Temper chutney with oil, garlic, mustard, cumin, urad dal, curry leaves, mix well - done!
🍽️Serve with Rice🍚 & lots of Ghee🧈✨ - Irresistably tasty!🤤

Beans Paruppu Usili/Beans Senagapappu Kobbari Fry🎋🟡🌶️🍚 (Mix of recipes inspired by .official & )
👉Grind together 2tbsp soaked chana dal + cumin + curry leaves + 2 dry red chillies into a coarse mix, fry for 2 mins in 1 tbsp oil, keep aside.
👉Steam beans for 10mins, in a steamer basket.
👉Heat another tbsp of oil, add tadka(mustard, urad dal) + garlic + onion, steamed green beans & the roasted chana dal mix, season with salt, mix and cook covered for 2 mins, add grated coconut, cook another 1 min, covered.
🍽️Serve with Rice🍚 or Roti🫓

Quick After-School📚🕓 Savory Waffles🧅🫑🧇 with Sweet Chilli Mayo🌶️🍦 snacking😋

Talking about re-purposing pantry items with a twist😃, I borrowed this genius of an idea from my elder co-sister, when I tasted a pancake version she made while visiting my niece & nephew’s place many years ago and looooved it😍 That only meant (got instantly engrained in my brain) to of course try it once again for our after-school snack as well, but in a waffle form!

👩🏻‍🍳
Savory Waffles🫑🧅🧇

Things you need:
•Pancake/Waffle mix (I use store-bought for convenience but you can make your own if you are up for it, the fluffiness might vary though)
•Mini Waffle maker
•Oil Spray
•Chopped Bell Peppers & Shallots or Onions
•Salt & Pepper
•Sauces: Mayo(Avocado Oil based to keep it healthy-ish) & Sweet Chilli Sauce

Method:
👉Follow package instructions to mix the desired amount of waffle mix, prep veggies & mix sauces as shown in pictures.
👉Pre-heat & spray waffle maker with oil before pouring out batter, place veggies on top, season with salt & pepper, close the waffle maker & let cook until golden.
🍽️Serve with a side of Sweet Chilli Mayo🌶️🍦- Quick⏱️ & yummy😋 after-school snack, fixed!
