Couldn’t have asked for a more sweeter gesture in this lifetime than being called Amma by my 3 loves💕 - 2 littles👦🏻👧🏻 & 1 hubs dearest🥰 after spending a relaxing Sunday with pretty tulips🌷, handmade wishes by M&D from school🏫, a silly card💌 with sweet wishes before having Italian🇮🇹 lunch at my favorite (San Carlos, CA) followed by a food coma nap😴 from all the yums🤤 & Biryani + Tandoori Chicken Pakistani🇵🇰 from hubs picked up so I don’t have to cook today😊

Game Day Dinner⚾️🧢 we came back home to🫶🏻

On the menu🍽️:
•Cabbage Pachadi🥬🍅🌶️
•Chukkakura Sorakaya🌱🍐
•Green Chilli Tilapia Fry🐟 with special masala✨
served with Rice🍚, homemade Ghee🧈✨followed by Yogurt🤍


Masala hand pounded with a mortar & pestle:
Ginger
Garlic
Green Chillies
Cinnamon
Cardamom
Cloves
👉Used thawed & washed tilapia seasoned with salt, turmeric, kashmiri chilli powder, coriander powder & the pounded green chilli masala.
👉Marinated before leaving to the game⚾️🧢, pan fried for 10mins just before serving while the kids finished their showers🚿after coming back.
👉Cilantro garnish is a must!🌿

Cabbage Pachadi/Chutney🥬🍅🌶️
👉Pan fried in a bit of oil: cumin seeds, green chillies, red chilli, 2 garlic cloves - put aside.
👉Used the same pan to cook cabbage + 1 tomato with tamarind, turmeric & salt, cover cooked until soft. Cool down.
👉Grind all above first in a blender, along with the tamarind chunk, more salt, pulse, add cooled down veggies, pulse until uniformly ground but still a bit chunky.
👉Tadka🪄 with oil, mustard, cumin, urad dal, chana dal, curry leaves, heing.

Special food🍛 on a random not so special day is what you need to keep up with your mental well-being🧘🏻‍♀️

💠Kakarakaya Karam🥒🌶️/Bitter Gourd
💠Palakura Pesarapappu🌱🟡/Spinach Moong Dal
💠Asparagus Aloo Tomato🎋🥔🍅
💠Shrimp Fry🦐
with Rice🍚 & homemade yogurt🤍

👩🏻‍🍳
Masala used for Kakarakaya Karam(dry roasted & ground with water & salt) - sesame seeds, dry red chilli, dry coconut, coriander seeds, cumin seeds, putnala podi(dalia/roasted chickpea flour) & garlic
👉Stuffed into peeled, pitted, slit, salted, water squeezed out kakarakaya/bittergourd, fried until 50% done, took out.
👉Fried onion, chillies & leftover masala in the same pan with more oil, re-arranged all kakarakayas and cooked on low heat until 100% done & brown on all sides.

Had leftover frozen asparagus I had in the freezer from a long time ago which I added into regular aloo tomato fry to make it fiber rich & this combo turned out super delish!

On the menu🍽️:
•Brussels Sprouts Coconut Fry🥬🥥
•Spinach Methi Pappu🍃🍀💛(used leftover frozen methi & frozen spinach saved from a fridge emptying session)
•Salmon Bhurji🍣🌶️🌿
with Rice🍚, homemade Ghee🧈✨ & homemade Yogurt🤍

👩🏻‍🍳
Brussels Sprouts Coconut Fry🥬🥥(made just like cabbage fry)
👉Sauté together in oil; mustard, cumin, urad dal, chana dal, curry leaves, dry red chilli, garlic, onion until soft.
👉Add thinly sliced brussels sprouts(outer later removed and bottom trimmed), salt, turmeric - cook until 50% done.
👉Season with spices - red chilli powder, coriander powder, sauté until brown with lid covered, add frozen shredded coconut, let thaw with lid covered again.
👉Mix well, sauté on medium heat until coconut is slightly toasty & cilantro garnish🌿
🍽️Pair with your fav dal/pappu or rasam & Rice with Ghee👌

👩🏻‍🍳
Salmon Bhurji🍣(Fry, Steam, Mash, Sauté method)
👉Fry marinated thawed Salmon with 1 tbsp oil+salt+turmeric+red chilli powder
👉Steam with ½ cup water on low heat until fully cooked
👉Mash with fork, keep aside, prep aromatics.
👉Sauté with oil, whole garam masala(3 Cs), cumin seeds, onion, curry leaves, green chillies, crushed ginger garlic.
👉Season with spices - kashmiri chilli powder, red chilli powder, coriander powder, clove coriander powder
👉Sauté until brown, add more green chillies & Cilantro garnish🌿

Vankaya Perugu Pachadi🍆🌶️🌿🤍
👉Sauté chopped eggplant with oil & salt on low heat until tender, cool down, add to a container.
👉Add tadka - oil, mustard, cumin, urad dal, chana dal, curry leaves, garlic, dry red chilli along with chopped raw onion, raw green chillies, raw cilantro & 4 tbsp cold yogurt to the same container, mix well, adjust salt & rest in the refrigerator until ready to serve - Done✅

👉Made with thawed frozen black cod marinated with usual spices - salt, turmeric, red chilli powder, kashmiri red chilli powder, coriander powder, crushed ginger garlic.
👉Sautéed until all sides turn brown, finished with onion slivers, cover cooked until soft - Done✅

Cabbage Carrot Beetroot Coconut Fry🥬🥕♥️🥥
👉Steamed all veggies in a steamer basket for 8mins(to retain max nutrients), added to tadka + onion, garlic, turmeric powder, onion, green chillies, sautéed with salt+coriander powder & garnished with shredded coconut in the last 1 min of cooking - Done✅
