Boujee Breakfast Egg Muffin Sandwich🍳☁️🥪 anyone?🤤

Steamed Egg & Cheese Muffin Sandwich with a side of Strawberries🍓, Blueberries🫐 & Avocado🥑

Beat each egg slightly with salt before pouring into an idli mold sprayed with oil, steam for 9mins, turn off heat, place pepperjack cheese slices on top and cover until melted before transferring onto a toasted english muffin layered with butter lettuce & done!

I just stick the idli plate into the dishwasher & sometimes use the same pan to toast the muffin so cleanup is a breeze!

Aratikaya/Raw Banana Fry
👉Boil peeled and chopped raw banana in water with salt + turmeric until fork tender, strain, keep aside.
👉Fry with tadka(mustard, cumin, urad, chana, curry leaves): onion, garlic and season with kashmiri red chilli powder, coriander powder, salt, sauté until golden brown & top with grated coconut - let cook for 1 min until toasty & cilantro garnish🌿 - Done!

👩🏻‍🍳
Indian Omelette🍳(indian old-school type) made with finely chopped onion, green chillies, cilantro first mixed with salt, turmeric, chilli powder then added in cracked eggs, beat until frothy and make omelettes in batches with avocado oil, medium heat cook until bottom sets, lower heat to 2, flip, cover with lid and cook low and slow for 2mins until fluffy. Serve as a protein side to your main dishes - Soft & Delish Omelette is ready!

Rainy Day☔️ Comfort Food🇮🇳🤗 - Yes, Please!🤤

Chana Masala🌰🍲 & Poori🎈on a rainy day☔️ hit all the right spots for sure!🎯😋*proceeds to take a long nap*🥱😴🤭

Chana Masala🌰🌶️🌿🍲/Spiced Chickpea Curry
(Mind-blowing recipe from YFL 😍👌)
Ingredients: (please measure tsp & tbsp carefully for optimum flavor)
1 cup Dry Chickpeas (Soak overnight or 8+ hrs)
¾ Jumbo Onion
2 Thai Chillies
2 Tomatoes (On the Vine variety)
Ginger 1 inch piece
4 Garlic cloves
1 Black Cardamom
1 Cinnamon Stick
2 Bay Leaves
3 Cloves
Cumin Seeds ½ tsp (was out of, so used cumin powder)
Curry Leaves 6
Kashmiri Red Chilli Powder 1 tbsp
Turmeric ½ tbsp
Coriander Powder 2 tbsp
Aamchur Power 1 tsp
Kasoori Methi 1½ tbsp (crushed between palms)
Salt
Baking Soda 1 pinch
Ghee
Oil
Method:
👉Pressure cook soaked Chickepeas with double the water, salt, baking soda, cinnamon, cloves, bay leaves for 5 whistles. Fish out the cinnamon & bay leaves.
👉Grind onion in a blender until smooth, keep aside. Grind together Tomatoes, Chillies, Ginger & Garlic, keep aside.
👉Heat oil+ghee, sauté cumin seeds, curry leaves, onion paste until brown, lower heat add salt, kashmiri chilli powder, turmeric, coriander powder, aamchur, sauté for 1 min.
👉Add the tomato mix, add the black cardamom, sauté sauté sauté until fully dry, brown & shiny. Add 1/4 cup water, cook covered until it releases oil.
👉Add the cooked Chickpeas along with all the water, add 1 cup more water, adjust salt, let boil on high heat until thick to your liking & releases oil again.
👉Add kasoori methi, just a pinch of garam masala & cilantro garnish🌿
🍽️ Serve hot with Poori🎈 or Jeera Rice🍚 & a side of Onions🧅 + Lime wedges🍋 - Yum Yum Yummm!🤤

Poori🎈(Yields 15)
3 cups Whole Wheat Flour(Sujata Chakki Fresh Atta)
1 ½ - 2 cups room temp Water
½ tsp Salt
Peanut Oil to deep fry
👉Knead 2 mins, Rest 30mins, Roll thick so they fluff up well, deep fry until golden✨
👉Enjoy piping hot, right out of the frying oil☄️ - Takes you straight to food coma!🤤🤤
