Veg Paneer Pulao🍢🥕🥔🫛🍚 & Raita🍅🥒🤍 Vibes✨

with a side of Kettle Style Jalapeño Chips🤤

Veg Paneer Pulao🥕🥔🫛🍢🍚
👉Sauté whole spices in Oil + Ghee - cumin, cinnamon, cardamom, cloves, bay leaf, stone flower(dagad phool), star anise; Onion, Curry Leaves, Green Chillies, crushed Ginger Garlic. Sauté for 2 mins then add cubed Paneer & your choice of veggies. I used Potato, Cauliflower, Green Beans, Carrot & ½ Tomato.
👉Add Salt, Turmeric, Coriander Powder, kashmiri red chilli powder, sauté on medium until potato cooks 50%. 👉Add Mint & Cilantro, sauté for 30sec.
👉Add 30min soaked 2 cups Basmati rice on top of the veggies, don’t mix, add 3½ cups water without disturbing the rice too much, sprinkle salt & pepper on top.
👉Lightly spread the rice into an even layer & pressure cook on med-high for 3 whistles(1 cooker whistle = IP 3mins), take off heat rest for 15mins before opening lid.
🍽️Serve hot with chilled raita🤍 - Yum!!

Balanced⚖️ Breakfast⏰🌅 of Champions!🏆😋

On my plate🍽️:
•Greek Yogurt🤍 with H**p Seeds✨, Pomegranate Seeds♥️ & Honey🍯
•Cauliflower Carrot Potato Soup🥦🥕🥔🍲(leftover) with Pumpkin Seeds🎃
•Sautéed Spinach🍃 & Onion🧅
•Boiled Eggs🪺 with Tabasco sauce🌶️
•Kiwi🥝

👩🏻‍🍳
Cauli Carrot Potato Soup🥣
👉Sauté in a bit of Avocado oil for 2mins: Cumin Seeds, Bay Leaf, Garlic & chunky cut Onion, Potato, Carrot, Cauliflower.
👉Add Salt, No Salt Seasoning from Costco(has dry herbs), Pour 2 cups of water, bring to a full boil on high heat, cook covered for 10mins until veggies are fork tender.
👉Strain all veggies, remove the bay leaf, add the broth back into the empty pot, grind the cooked veggies in a blender until smooth, add back into the broth, bring to a boil again and cook for 15mins on med heat covered until thick.
🍽️Serve hot seasoned with lots of fresh black pepper - A yummy warm hug in a bowl!🤗🤤

Another Balance⚖️ is Balancing🤹🏻 Meal🍛💁🏻‍♀️

•Chamadumpa Guddu Pulusu🫚🥚🍲/Taro & Egg Tamarind Stew
with Rice🍚+Quinoa🌾, homemade Ghee🧈✨ & homemade Yogurt🤍

👩🏻‍🍳Sorakaya Nuvvupodi/Bottlegourd with Sesame powder
👉Dry roast 3 dry red chillies(broken) & 2 tbsp sesame seeds until toasty, cool down, grind to a coarse powder🌪️, keep aside.
👉Sauté tadka(oil, mustard, cumin, urad, chana, curry leaves), onion, garlic, turmeric, finely chopped sorakaya, salt, cook until soft on medium heat covered.
👉Add the ground sesame powder, cover and cook for 2 mins on low heat, turn off heat, cilantro garnish🌿
🍽️Serve this simple calcium rich curry with hot rice or tastes great with chapati/phulka as well.
📌This is my go-to and the best way to incorporate sesame seeds regularly into your diet for a calcium boost!
