Chana Masala🌰🌶️🌿🍲/Spiced Chickpea Curry
(Mind-blowing recipe from YFL 😍👌)
Ingredients: (please measure tsp & tbsp carefully for optimum flavor)
1 cup Dry Chickpeas (Soak overnight or 8+ hrs)
¾ Jumbo Onion
2 Thai Chillies
2 Tomatoes (On the Vine variety)
Ginger 1 inch piece
4 Garlic cloves
1 Black Cardamom
1 Cinnamon Stick
2 Bay Leaves
3 Cloves
Cumin Seeds ½ tsp (was out of, so used cumin powder)
Curry Leaves 6
Kashmiri Red Chilli Powder 1 tbsp
Turmeric ½ tbsp
Coriander Powder 2 tbsp
Aamchur Power 1 tsp
Kasoori Methi 1½ tbsp (crushed between palms)
Salt
Baking Soda 1 pinch
Ghee
Oil
Method:
👉Pressure cook soaked Chickepeas with double the water, salt, baking soda, cinnamon, cloves, bay leaves for 5 whistles. Fish out the cinnamon & bay leaves.
👉Grind onion in a blender until smooth, keep aside. Grind together Tomatoes, Chillies, Ginger & Garlic, keep aside.
👉Heat oil+ghee, sauté cumin seeds, curry leaves, onion paste until brown, lower heat add salt, kashmiri chilli powder, turmeric, coriander powder, aamchur, sauté for 1 min.
👉Add the tomato mix, add the black cardamom, sauté sauté sauté until fully dry, brown & shiny. Add 1/4 cup water, cook covered until it releases oil.
👉Add the cooked Chickpeas along with all the water, add 1 cup more water, adjust salt, let boil on high heat until thick to your liking & releases oil again.
👉Add kasoori methi, just a pinch of garam masala & cilantro garnish🌿
🍽️ Serve hot with Poori🎈 or Jeera Rice🍚 & a side of Onions🧅 + Lime wedges🍋 - Yum Yum Yummm!🤤

Poori🎈(Yields 15)
3 cups Whole Wheat Flour(Sujata Chakki Fresh Atta)
1 ½ - 2 cups room temp Water
½ tsp Salt
Peanut Oil to deep fry
👉Knead 2 mins, Rest 30mins, Roll thick so they fluff up well, deep fry until golden✨
👉Enjoy piping hot, right out of the frying oil☄️ - Takes you straight to food coma!🤤🤤
