CUCUMBER DOSA🥒( RECIPE BELOW)

This dosa is traditional recipe from Mangalore. Super soft flavorful tasty healthy instant dosa.

Ingredients

Raw rice 1 cup
1/2 cup coconut
1 inch ginger
2 green chilli
3 cup cucumber
Coriander leaves
Salt

Wash and soak rice for 4 hours then grind with other ingredients. It's an instant dosa so no need of fermentation. Heat dosa pan and make dosa. Serve it with spicy chutney.
Notes:
Water from cucumber is enough if needed add 1/4 cup water to blend the batter while grinding.

BANANA BLOSSOM VADAI🥯 ( RECIPE BELOW)

Crispy delicious bananaflower vadais made with a mix of dals, spiced with coriander, fennel and chillies.

Ingredients

• 3/4 cup channa dal
• 2 tbsp urad dhal
• 5 red chillies
• 1 tsp fennel seed
• 2 pods garlic
• 1/2 inch ginger
• 1 cup cleaned and chopped banana flower
• 1/4 cup chopped onion
• curry leaves

Instructions

1. Rinse and soak dals in boiling water for 2 hours.
2. Drain all water completely. Keep the dals on a colander to ensure all water is fully drained out.
3. Add the dals in mixie jar grind in using the pulse mode, break down to a thick batter. It is important to not add any water when making the batter.Open the mixie multiple times, scrape the sides before adding extra dal.
4. In between the dals, add red chilli, fennel,ginger, garlic grind along with it. Remove the batter, add the finely chopped bananaflower, curry leaves and grind it in pulse mode.
5.Now take to bowl add onion, curry leaves, salt and mix well.
• Make vadais, frying a few at a time. Keep the flame on a low to medium and fry for 6-7 minutes per batch.
• These vadais stay crispy for a while and it is fantastic with ketchup or chutney.

Gluten-free, high protein healthy alternative to the traditional ones with rice. Perfect for diabetics. It is no rice, no fermentation idli.

• 1 Cup Moong dal
• Salt
• ¼ Cup Grated Carrot
• 1 tbsp Coriander Leaves
• 1 tsp Eno
For Tempering
• 2 tsp Salt
• 1 tsp Mustard seeds
• 1 inch Ginger Chopped
• 2 Green Chili
• Few Curry leaves

Wash and soak moong dal for at least 3 hours
After 3 hours, drain water from the dal, put it in the mixie jar, and grind it to smooth batter. Add little water to grind, not more.
Heat oil in a pan. Add mustard seeds and allow it to sputter. Then add chopped ginger, green chili, and curry leaves.
Add this tempering to the ground Moong Dal Batter. Also, add salt to the batter
Next, add the grated carrot, chopped coriander leaves to the batter, and give the batter a good stir
Finally, add eno salt just before you plan to make it idli. Adding Eno salt makes the batter fluffy and more diluted, and we don't need any fermentation of the batter. Always add eno salt just before you are ready to steam the idli.
Grease the idli plates with oil. Add a ladle of batter in each idli mold. Steam cook for about 10 mins. Serve with spicy chutney.

CAULIFLOWER BONDA🧆

Cauliflower bonda is a versatile vegetable that can roast along with other spices and makes for an excellent, easy evening snack. It tastes amazing.

Cauliflower florets 1 cup
onion 1/4 cup finely chopped
green chilies 3
Ginger garlic paste 1 teaspoon
coriander leaves chopped 1/2 cup
curry leaves few chopped
turmeric powder 1/4 teaspoon
chilly powder 1 teaspoon
Garam masala/ curry masala - 1/2 tsp
asafoetida powder 1 pinch
besan / kadalamaavu 3/4 cup
rice powder 1 tbsp
salt
oil

Preparation:
Boil water and soak cauliflower. Drain water after 10 minutes, then chop cauliflower. Chop onion, green chilies. Mix all the ingredients together except oil. Sprinkle little water and mix again. Make small bondas. Dont add more water, then it will absorb oil. Deep fry bondas. Have with hot tea.

MTR BADAM MIX BURFI💗👌( RECIPE BELOW)

Easy dessert recipe made under 15 mins using MTR Badam mix. It tastes amazing like sweet shops, milk almond peda.

Ghee - 1 tsp
Milk - 1/2 cup
Milk powder - 1 cup
Mtr mix - 1/2 cup

In a pan, add ghee 1 tsp, then add milk once it's hot, add milk powder mix well without lumps. Once it's thick, add mtr badam mix and mix well, and once it comes together without sticking in the pan, immediately transfer to a greased plate and spread it evenly. Cool it and cut it in the desired plate.

QUINOA VEG BIRYANI 🍛

Quinoa works great as a rice substitute, and they are so much healthier too. This gluten-free grain is rich in protein, vitamins, and dietary fiber. This rice is perfect for lunch boxes.

FOR RICE
2 cup quinoa
3.5 cups water
(For 1 cup quinoa,1 and 3/4 cup water)

OTHER INGREDIENTS
1 tablespoon Ghee
2 tablespoons Vegetable oil
150 gms onion, sliced
salt as needed
10 mint leaves
3–4 stalks coriander leaves
1 Carrots
1 potato
7–8 Beans
Mix
100 gms tomato, chopped
1/2 teaspoon turmeric
1 tbsp Kashmiri chili powder
1/2 tsp Garam Masala Powder
1 tbsp yogurt
Temper
2 inch piece cinnamon
2 cloves
1 cardamom
1 small piece mace
1/2 tsp fennel seeds

Method
Soak the quinoa in water for 30 minutes.
Next, in a bowl, mix all the ingredients under the Mix.
In the pressure cooker add oil. Then, add the temper ingredients. Add in the sliced onions and fry until the onions are soft.
When the onions are soft, add the ginger garlic paste to saute until the raw smell goes off.
Add the mixed ingredients with tomatoes and saute well until oil floats on top.
Add in the chopped veggies and fry for 2-3 minutes. Add in the chopped coriander leaves and mint leaves. Now add the quinoa and mix well
Add 3.5 cups of hot water for two cups of rice, and let it come to a boil. Now pressure cook for 1 whistle on high, then lower heat and pressure cook for 5 minutes; remove from heat to avoid further cooking and to allow pressure to drop naturally.
