Some of my favorite memories are from my grandmother’s back porch—nipping green beans and listening for the weight to jiggle on her pressure canner. There is a deep, unmatched pride in looking at a pantry shelf full of food you grew and preserved yourself. Throwback to last year’s 50-pound potato harvest! 🥔 We had an amazing yield, but without a dedicated root cellar or the ideal cool storage space, keeping them whole long-term is always a bit of a challenge.
This year, I’m changing up the preservation game plan so nothing goes to waste. I’m already planning to prep and freeze large batches of homemade French fries and shredded hash browns for easy family breakfasts.
I’m also tossing around a few other methods to put this year’s crop up:
Pressure Canning: Dicing them up and firing up the canner for shelf-stable potatoes that are perfectly tender and ready for winter soups and stews.
Dehydrating: Slicing them thin to store in jars for homemade scalloped potatoes, or grinding them down into instant potato flakes.
Blanching & Freezing: Freezing pre-portioned, blanched chunks to toss straight into boiling water for quick mashed potatoes on busy weeknights.
