Enjoy a day in our life at the bakery. 😆

Fun fact—did you know that you need the TINIEST bit of starter to be able to feed, maintain, and bake delicious recipes?

At one point in the video, you’ll see me scrape our starter containers almost completely empty. I could have still fed the small amount left on the walls of the container after that and been good to go.

A common misconception is that you have to keep huge amounts of starter on hand. Most times, you’ll end up making more than you can possibly use and discarding the majority of it, not to mention all the flour you’ll go through in the process.

Keep a small (we’re talking tablespoon size) amount of starter on hand, feed it with at least the same amount of flour and a splash of water, and watch it grow! Need more starter? Discard less, and add more flour. Need less starter? Discard more, and add less flour.

Helpful hint: we prefer an extra thick, flour-heavy feed for our starter. 😊
