orange creamsicle pie (vegan) 🍊
a creamy, citrusy, nostalgic dessert that tastes like sunshine in a pie☀️

ingredients
crust
1 cup graham cracker crumbs
½ cup pecans
6–8 dates
3 tbsp melted vegan butter
pinch of salt
filling
2 cups fresh squeezed orange juice
½–⅔ cup sugar
4 tbsp cornstarch
1 can full-fat coconut cream
1–2 tsp orange zest
½ tsp vanilla
pinch of salt
instructions:
blend graham crackers, pecans, and dates until crumbly + sticky. add melted vegan butter + salt and pulse until it holds together. press firmly into a pie dish (bottom + sides) and chill while you make the filling.
in a saucepan (heat off), whisk together orange juice, sugar, and cornstarch until smooth. place over medium heat and whisk constantly until thick and glossy.
lower heat and stir in coconut cream, orange zest, vanilla, and salt until silky and fully combined.
pour filling into the chilled crust and smooth the top. refrigerate overnight or freeze 2-4 hours until set.
top with coconut whipped cream before serving ✨
