Pear + honey whipped ricotta puff pastry ππππ
One of my fav easy weekend breakfasts π₯

Ingredients:
1 sheet of pre-made puff pastry, thawed according to package instructions
8 oz of dairy free ricotta cheese
3 Tbs of honey
1 Alonna melon sliced
1 lemon juiced
1TBS olive oil
Β½ tsp salt
Sliced almonds
2 TBS fresh mint chopped
First, preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. Next, roll out your puff pastry on a lightly floured surface until itβs about 1/4 inch thick and place on baking sheet lined with parchment.
Roll up the edges of your puff pastry. Set aside and whip the ricotta cheese in a medium-sized mixing bowl until itβs smooth and fluffy. Stir in the honey and remaining ingredients aside from the chopped mint and mix until everything is well combined. Fold in your chopped mint and spread all of the whipped ricotta mixture over the puff pastry. Add your sliced melons on top. Add a layer of almonds and extra honey drizzle before baking. To get a perfect golden crust use an egg wash over the edges before baking. All you need is 1 egg and 1 Tbs water whisked really well.
Bake for 20-30 minutes, let cool slightly and use a pizza cutter to slice into bite size pieces Serve the puff pastries immediately, while theyβre still warm and flaky.
