The best way to show our love and appreciation for our moms is to treat them to something they truly enjoy. And what better way to do that than by cooking.
These herby and meaty stuffed mushrooms are the best and definitely she’ll love it!So let’s make her feel special on Mother’s Day!

How to make this recipe:

“Herby & Meaty Stuffed Portobello”

Ingredients:
- 6 to 8 pieces big portobello mushrooms
( stem removed & finely chopped)
- 16 oz ground beef
- 5 cloves of minced garlic
- 1/2 pieces of red large onion (chopped)
- 2 pieces mini sweet peppers (brunoise cut)
- 1 bunch of finely chopped parsley
- 2 tablespoon olive oil for sautéing
- extra olive oil for spraying
- 1 tsp paprika, dried oregano and thyme
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 cup breadcrumbs
- 1/2 cup grated pecorino cheese
- Finely chopped cilantro for garnish

Heat 2 tablespoons olive oil in cast iron skillet.
Sauté garlic and onion until aromatic. Add ground beef. Season with paprika, dried oregano, thyme salt and black pepper, also add the finely chopped mushroom’s stems. Cook in medium heat for 18 minutes. Cool down
Preheat oven to 400 degrees F
Mix the finely chopped parsley,mini sweet peppers,breadcrumbs and pecorino cheese to the cooked ground beef until incorporated.
In a baking tray put a parchment paper and position the portobello mushrooms then spray each one of it with olive oil. Fill mushrooms with the mixture ground beef and herbs. Spray again with olive oil then bake for 20 minutes. Garnish with pecorino cheese and cilantro.

Fried Cubed Cod Fish with Thai Mango Salad 🐟🥭🥗

Ingredients:
- 1 1/2 lb cod fish (cut into cubes)
- 1/4 cups apf
- 1/4 cups cornstarch
- 1.5 tsp kosher salt
- 1 tsp crushed black pepper
- 1.5 tsp paprika
- 1 tsp MSG ( optional )
- 1 tsp garlic powder
- 1/2 cup vegetable oil
- 1 piece unripe mango (julienne cut)
- 1 piece baby cucumber (sliced)
- 8 pieces grape tomatoes (cut into halves)
- 1 cup of spring mix salad
- 1/2 piece from large red onion (sliced)
- 1/4 cups cashew nuts
- 1 tablespoon fish sauce
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1/4 cups chopped cilantro

How is it made:

In large serving plate add spring mix salad,mango,cucumber,red onion,grape tomatoes and cashew nuts.

In a small bowl combine fish sauce,lemon and honey until incorporated.

In a large plate combine all purpose flour, cornstarch, salt, msg, paprika, garlic powder and black pepper. Coat cod fish with seasoned flour mixture. Heat oil in cast iron skillet, fry the coated fish until golden brown.

Add the fried fish over the top of the salad then pour the mixture fish sauce.

Garnish with chopped cilantro.

Spring Salad for Spring Season 🌼🌿🌷

Avocado Spring Salad with Japchae Dumplings

Ingredients:
- 1 cup spring mixed salad
- 1/2 piece of a large avocado
- 15 grams chopped red onions
- 3 pieces grape tomatoes (cut into halves)
- 1 tbsp crushed roasted cashew nuts
- 3 pieces Japchae dumplings
For dressing
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 3 tsp sugar

How to make it
In a bowl add the spring mixed salad,tomatoes,red onion and the slices of avocado.
Heat oil in a pan. Fry dumplings until golden brown.
In a small bowl mix all together the ingredients for dressing until dissolved.
Add the fried dumplings and pour the dressing mixture over the top. Garnish with crushed cashew nuts.
Serve.
