Crispy Parmesan Artichoke Hearts
Ingredients:
1 can (14 oz) quartered artichoke hearts, drained and patted dry
1 cup grated Parmesan cheese
1/2 cup breadcrumbs (panko preferred for extra crispiness)
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
2 large eggs, beaten
Olive oil spray or cooking spray
Instructions:
1️⃣ Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2️⃣ In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
3️⃣ Dip each artichoke heart into the beaten eggs, then coat in the Parmesan breadcrumb mixture, pressing gently to adhere.
4️⃣ Place coated artichoke hearts on the prepared baking sheet.
5️⃣ Spray lightly with olive oil spray to help them crisp up.
6️⃣ Bake for 20–25 minutes, turning halfway through, until golden brown and crispy.
7️⃣ Serve hot with your favorite dipping sauce (like marinara or aioli) if desired.
