🌿 The Cast-Iron Lemongrass Chicken
While the Florida heat melts the rest of my garden, my Lemongrass is practically taking over🌿🔥
If you garden in Zone 9, you know that late summer is brutal on traditional crops. But lemongrass is absolutely indestructible. Instead of just letting it look pretty in the yard, it is time to bring those tough, citrusy stalks right into the kitchen.
These cast-iron Lemongrass Chicken Tenders feature a bold, savory marinade and a hearty, golden-brown crust.

Here is why you need to be growing and eating fresh lemongrass:
• The Zone 9 Survivor: It thrives in 90+ degree heat, survives our heavy summer downpours, and multiplies effortlessly in our sandy Florida soil.
• Gut Health Guardian: Fresh lemongrass is packed with natural antioxidants and essential oils (like citral) that help soothe digestion and reduce bodily inflammation after a long day of chores.
• Garden Defender: While it tastes incredible on your plate, just having these massive clumps growing near your porch naturally helps deter mosquitoes!
✨ THE RECIPE ✨
The Marinade:
• 1.5 lbs chicken tenders
• 2 stalks fresh lemongrass (tender white core only, finely minced!)
• 3 cloves garlic & 1 tbsp fresh ginger (minced)
• 2 tbsp soy sauce (or coconut aminos) & 1 tbsp fish sauce (the secret ingredient!)
• 1 tbsp raw honey & 1 tbsp lime juice
The Homestead Method:
1. Toss the chicken in the marinade and let it soak for 20 to 30 minutes.
2. Pull the tenders out and press them directly into a shallow dish of 1/2 cup all-purpose flour mixed with 1/2 tsp sea salt. Press firmly to build up a hearty coating!
3. Heat a cast-iron skillet with 3-4 tbsp of beef tallow, bacon grease, or butter over medium-high heat.
4. Fry the chicken for 3 to 4 minutes per side until deeply golden brown and perfectly crunchy.
5. Rest on a wire rack (not a paper towel!) so the bottom crust stays crispy.
Skip the takeout line tonight and put that overgrown garden herb to work! 🍽

🥞Wild Breakfast
The ultimate Florida homestead breakfast doesn’t come from a box—it comes from the woods and the sourdough jar. 🥞🌿✨

I took our wild-foraged American Beautyberry harvest and decided to tweak my syrup recipe! This time, I used an extra-heavy pour of the extracted berry juice and used cane sugar with some rich, raw honey. The result? A deeply floral, earthy-sweet, syrup that completely elevates breakfast.

And naturally, you can’t make wild syrup without the perfect vessel to soak it up: fluffy, crispy-edged sourdough discard pancakes cooked in a hot cast-iron skillet.

Here is exactly how to bring this zero-waste, wild-foraged breakfast to your own table:

🟣 HONEY BEAUTYBERRY SYRUP
• The Juice: Boil down your fresh, destemmed beautyberries in water for 20 minutes, then strain to get a strong, clear juice (I didn't hold back on the juice this round!).
• The Shift: Add 2 tbsp of fresh lemon juice to the liquid and 2 cups sugar
• The Simmer: Simmer the juice on medium heat to let the water reduce.
• The Honey: Remove the pot from the heat and stir in a generous pour of raw honey to taste. (Homestead Secret: Stirring the honey in off the heat ensures you don't cook out its natural, raw benefits!)

🥞 THE SOURDOUGH DISCARD PANCAKES
• Wet Bowl: Whisk 1 cup unfed sourdough discard, 1 cup milk, 2 eggs, 2 tbsp melted butter, and a splash of vanilla.
• Dry Bowl: Whisk 1 cup all-purpose flour, 1 tsp baking soda, and 1/2 tsp sea salt.
• The Magic: Right before cooking, fold the dry ingredients into the wet bowl. The acid in the discard reacts violently with the baking soda to create a thick, bubbling batter! Do not overmix.
• The Fry: Ladle into a hot, butter-greased cast-iron skillet. Flip when the bubbles pop on top and the edges get golden and crispy.

Smother those hot cakes in your wild syrup and enjoy the literal fruits of your labor! What is your favorite way to use up your sourdough discard? 👇

🟣Wild Beautyberry Jelly

Right now, American Beautyberry is taking over our Zone 9 homestead. While they don’t taste all that great straight off the bush, boiling them down and turning them into jelly unlocks a sweet, complex flavor that tastes like a wild mix of elderberry and plum!

Turning these native berries into jelly isn’t just a fun weekend foraging project; it has real, functional homestead benefits:
• Heavy-Duty Antioxidants: That deep purple color comes from anthocyanins, powerful compounds that help fight oxidative stress in the body.
• 100% Natural Color Shift: Say goodbye to artificial red dyes. The second the earthy berry juice mixes with the acid of the lemon juice, a natural chemical reaction turns it into this glowing magenta!
• Texture Perfected: We make jelly (strained juice) instead of jam (whole fruit) because raw beautyberry seeds are super gritty. Straining it gives you a perfectly smooth, crystal-clear spread.
• Hyper-Local Eating: Foraging native plants connects you directly to your local ecosystem and provides the ultimate sustainable, zero-waste food source.
It is absolute magic in a jar, and it tastes incredible spread over hot sourdough toast or paired with sharp cheeses on a charcuterie board.

Homestead Safety Check: Always be 100% positive about your plant identification before foraging, and never harvest from areas treated with pesticides.

Save this post for your next trip into the woods! Have you spotted these purple beauties on your property yet? 🌲

Meet the Florida homesteader’s secret summer green! 🌿✨
During the peak of my Florida summer garden traditional greens like spinach and lettuce completely bolt and die in this heat. Roselle leaves step up as the ultimate survival green, packed with the exact nutrients my body needs after a hard day of sweating in the garden.

Most people only grow Roselle for the red calyces to make tea in the fall, but the leaves are actually a powerhouse edible green! Raw, they have a strong, sour lemon kick (similar to sorrel), but when you sauté them down with heavy, traditional fats, they transform into a rich, savory, nutrient-dense side dish.

Here is why sautéing your Roselle leaves is actual homestead medicine:
• The Perfect Synergy: These leaves are naturally packed with both Iron and Vitamin C. Plant-based iron is notoriously hard to absorb, but Vitamin C acts as the biological "key" to unlock it, giving you a massive energy boost!
• Fat-Soluble Magic: The leaves are rich in Beta-Carotene (Vitamin A), which your body literally cannot absorb without fat. Sautéing them in beef tallow or butter drives those nutrients straight into your system.
• Taming the Bite: Just like spinach, raw Roselle contains oxalates. The heat from the skillet naturally breaks them down, making the minerals highly bioavailable (and much easier on your gut).

✨ THE QUICK RECIPE ✨
1. Melt 2 tbsp of beef tallow, bacon grease, or grass-fed butter in a cast-iron skillet.
2. Sauté chopped Roselle leaves I seasoned mine with some Simple Citrus.
3. Added with some rice seasoned with salt, pepper, garlic (SPG seasoning) & butter

Have you ever tried eating the leaves off your Roselle plant, or are you just patiently waiting for those red calyces to form? 👇

Has a sweet piney-citrusy taste 😋

All you need is water, cane sugar, and fresh edible pine needles. The natural yeast on the needles does all the heavy lifting, fermenting the sugar into gorgeous, fizzy bubbles over a few days.

I used fresh pine harvested right here on my Florida homestead. It takes about 3 to 7 days of fermenting (and daily "burping" of the jar to let the pressure out!)

The Benefits:
🌲 Probiotic Powerhouse: Supports digestion and gut health.
🌲 Immune Support: Delivers a heavy dose of natural Vitamin C.
🌲 Deep Hydration: A crisp, refreshing way to cool down after Florida yard chores.

The Homestead Safety Check: Not all pine trees are safe! Never use Yew, Norfolk Island, or Ponderosa pines. Down here in Zone 9, I stick to our native Slash, Longleaf, or Loblolly pines.

Have you ever tried fermenting your own soda? It is easier than you think!

🌿 The Real Benefits of Lemongrass Tea

• Rich in Antioxidants: Lemongrass contains several powerful antioxidants (like chlorogenic acid and isoorientin) that help your body fight off free radicals and oxidative stress.
• Anti-Inflammatory Properties: The main aromatic compound in lemongrass is citral. Citral is widely studied for its ability to help reduce inflammation in the body, which is great for soothing sore muscles after a long day of garden chores!
• Digestive Support: Traditionally, lemongrass tea is heavily used as a natural remedy to soothe stomach cramping, reduce bloating, and aid in healthy digestion.
• Mild Diuretic: It naturally encourages your kidneys to release more urine, which can help flush out excess fluid and sodium if you are feeling puffy or bloated.
• Naturally Calming: While it doesn't make you sleepy like lemon balm, the warm, bright citrus aroma is heavily used in aromatherapy to reduce stress and anxiety

🌿 The 2-in-1 Rosemary Scalp & Body Scrub
Sugar is the best physical exfoliant. It dissolves easily in water (so it won't clog your drains) and is gentler on the scalp than salt, which can sting if you have any little scratches from yard work!

Here is why this scrub is pure magic for your hair and skin:
✨ Gentle Exfoliation: The sugar naturally buffs away dead skin and breaks up sweat and oil on the scalp without stinging those little garden scratches.
🌱 Hair Growth Power: The castor oil delivers deep hydration and is famous for promoting healthy, thick hair growth.
🌿 Antimicrobial & Stimulating: Fresh rosemary naturally stimulates blood flow to the scalp and smells incredibly refreshing after a long day in the heat!
The Ingredients:
• 1/2 cup granulated cane sugar
• 1/4 cup carrier oil melted coconut oil
• 1.5 tbs castor oil
• 3 tablespoons fresh, finely chopped rosemary leaves (or 10 to 15 drops of rosemary essential oil)
The Method:
1. Finely mince your fresh rosemary leaves. You want them as small as possible so they wash easily out of your hair.
2. In a bowl, mix the sugar and the finely chopped rosemary (or essential oil).
3. Slowly pour in your carrier oil, stirring until it reaches the consistency of wet sand.
4. Transfer it to an airtight glass jar.
How to Use It: In the shower, take a small scoop and gently massage it directly into your scalp to break up sweat and oil buildup before shampooing. Then, use the rest to scrub down your arms and legs!

🍵Brewing a cup of pine needle tea is basically taking a shortcut to some of the best natural medicine my Florida backyard has to offer. It is wild how much nutritional value is packed into those little green needles!🏕🌲
Here is exactly what it is doing for your body:
🍊 The Ultimate Immune Booster (Massive Vitamin C)
This is what pine needle tea is most famous for. Fresh pine needles contain up to 4 to 5 times more Vitamin C than a glass of orange juice.
🫁 Respiratory & Sinus Relief
If you are dealing with allergies, a cough, or just that heavy, humid Florida air making you feel congested, this tea is a lifesaver. Pine contains a terpene called alpha-pinene. It acts as a natural expectorant (helping to clear out mucus) and a bronchodilator (helping to open up your airways). Just breathing in the steam from the mug before you sip is incredibly therapeutic for your lungs.
✨ Anti-Inflammatory Antioxidants
Those needles are loaded with powerful antioxidants, specifically flavonoids and polyphenols. After a long day of sweating, hauling compost, and weeding the garden, these antioxidants get to work fighting off the free radicals and oxidative stress in your body, which helps reduce overall muscle and joint inflammation.
😌 Stress Relief & Aromatherapy
There is a biological reason why we feel so at peace walking through a pine forest. The aromatic compounds in pine have been shown to naturally lower cortisol levels (the stress hormone) and have a calming, grounding effect on the central nervous system. Sipping it is essentially a mug of liquid stress relief.
☀️ Skin & Vision Support (Vitamin A)
Alongside the massive hit of Vitamin C, pine needles also bring a solid dose of Vitamin A to the table. This vitamin is crucial for maintaining healthy vision and supporting cellular turnover, which helps repair your skin after you've been out battling the brutal August sun all day.
⚠️ The Forager’s Safety Reminder:Just a quick recap to keep the homestead safe: Always make sure you are brewing true pines (like your local Slash, Longleaf, Loblolly, or Sand pines) and avoiding toxic look-alikes like Yew or Norfolk Island Pine.
