We harvested some motherland okra from the backyard garden. So today we made a classic Indian Bhindi masala. The trick to keep them away from being slimy is to rub the okras with salt and add vinegar. Let it sit for a few minutes then rinse with running water. Dry with kitchen cloth or paper towel before cooking.

Using our home made mango chutney dip in this less than 20 minute quickly prepared shrimp quesadilla. The kids enjoyed it so much like the adults in the house did.

Here's a quick recipe ready in less than 30 minutes. A ramen that hits the spot using dashi bonito miso paste and vegetable broth (i do add green onions and grated ginger to the broth while i boil and simmer - see below why). Use any left over veggies in your fridge , add eggs or tofu for your protein and boil any noodles. Season it with sesame oil, seaweed and chili oil.

Dashi (kelp and bonito) can be a bit fishy if you have a very sensitive sense of taste and smell like me, but by adding the ginger and onion, you really dont taste it after.

If you try this, let me know how you like it.
