Winter to spring rice!

Inspired by a dish called “good bye winter welcome spring rice” from the Chinese high end restaurant Xin Rong Ji but i tweaked the ingredients a bit and used asparagus and wild garlic.

All you need to know about Chinese soy sauce, 酱油

- Light soy sauce: all-purpose, must-have soy sauce used in both cooking and raw
- Dark soy sauce: to add color and thicken the sauce, used sparingly in braises and stir-fries for a brown glaze
- Seasoned soy sauce: used for specific dishes such as steamed fish or dim sums.

A few brands I regularly buy: Haday, Leekumkee and Pearl River Bridge, you can find these in asia Supermarkt all around Germany

Cooking as a “private chef” for my parents in Iceland 🧳🍲

If you're traveling with Asian parents and friends and want to cook (or just save money in expensive destinations), I recommend packing sauce packets, mini soy sauce, bagged chili oil, hot pot and dry pot sauces to cook with local ingredients. We got our Asian ingredients from asia Supermarkt , my parents were (happily) surprised for the selection

Meal 1: Hot pot with Icelandic lamb, tofu, and veggies, using individual Chongqing hot pot soup base �
Meal 2: Fancy Shin Ramyun with pork belly in Korean BBQ sauce.�
Meal 3: Chicken curry with potatoes & carrots, smashed cucumber salad (check my previous video for the recipe!), and instant miso soup.

Hot dry noodles, re gan mian(热干面)

Ingredients (serves 1):�• 80g dried (or 120g fresh) alkaline noodles�• 1 tbsp spicy preserved daikon radish or zhacai
• 1 tbsp pickled long beans (suan doujiao)�• 2 tsp Chinese sesame paste�• 2 tsp sesame oil�• 1 clove garlic, crushed�• 1 tsp water�• 1 tsp light soy sauce�• ½ tsp Chinese black vinegar
• 1 tsp scallion green, finely sliced�• ⅛ tsp chicken bouillon powder�• ⅛ tsp MSG�• ½ tsp chili oil (optional)�• A few spoonfuls of braising liquid
