Refreshing Tomato and Artichoke Salad with Capers

Ingredients:

1 pint cherry tomatoes, halved
1 (14 oz) can artichoke hearts, drained and quartered
2 tablespoons capers, drained
1/4 red onion, thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard

Cold Edamame Chickpea Salad with Ginger Lime Vinaigrette 🥗🌱
Nutrition Facts:
Calories: 320 | Protein: 15g | Carbs: 35g | Fat: 12g | Fiber: 10g

Ingredients:
For the Salad:
1 1/2 cups cooked chickpeas
1 cup shelled edamame
1/2 cup diced cucumber
1/4 cup finely chopped red onion
1/4 cup chopped cilantro
1/4 cup chopped mint

For the Ginger Lime Vinaigrette:
3 tbsp lime juice
2 tbsp olive oil
1 tbsp honey
1 tsp grated ginger
1/2 tsp salt
1/4 tsp black pepper

Instructions:
1. In a large bowl, combine the chickpeas, edamame, cucumber, red onion, cilantro, and mint.
2. In a small bowl, whisk together the lime juice, olive oil, honey, grated ginger, salt, and black pepper until well combined.
3. Pour the vinaigrette over the salad and toss gently to coat all ingredients evenly.
4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
5. Before serving, give the salad a quick stir and adjust seasoning if needed.
6. Serve chilled.
