Three changes and smoked mac and cheese stops being a casserole with a smoke ring on top.

One, the sauce goes on the smoker before anything else. Cream cheese, heavy cream, butter, mustard and a little hot sauce at 180 for 30 minutes, so the smoke ends up in every bite instead of just the first layer.

Two, cheddar and mozzarella together, and pull your noodles two minutes early.

Three, toast the panko in butter on the stove first. Raw panko goes soggy every single time.
