Turkey Enchiladas 🦃
RECIPE ⤵️
Ingredients:
•2 1/2 cups leftover turkey, chopped
•1 can cream of chicken soup
•1 (4 oz) can of green chiles
•1 can Rotel, drained
•2 (10 oz) cans of mild enchilada sauce
•4 cups Mexican-blend shredded cheese
•8 soft taco-size tortillas
•2 TBSP of The “CRAIN” Attraction seasoning
Instructions:
1. Preheat your oven or smoker to 350°F.
2. In a big mixing bowl, combine the chopped turkey, cream of chicken soup, green chiles, drained Rotel, and The “CRAIN” Attraction.
3. Grease a 9×13 baking dish and pour half of one can of enchilada sauce into the bottom.
4. Lay out your soft taco shells one at a time. Spoon in the turkey mixture, top with shredded cheese, roll up, and place seam-side down in the baking dish. Repeat this process for all 8 enchiladas, keeping them snug in the pan.
5. Once all enchiladas are in the dish, pour the remaining 1½ cans of enchilada sauce over the top and cover with the remaining shredded cheese.
6. Cover the dish with foil and bake for 45–60 minutes. Once hot and bubbly, remove the foil and bake another 10–15 minutes until the cheese is melted and golden.
7. Let rest for 15 minutes, then top with sliced green onions, cilantro, sour cream, your favorite salsa, or hot sauce and enjoy!
