DIY: Carrot Cake
By: Gil Salgado

It’s spring, which means carrot cake is officially in season. Grandma Kauffman’s (my grandma) old-fashioned carrot cake recipe will bring you back to your childhood. The moist cake will remind you of a spring breeze and the carrot flavor will have you wanting more. Let’s bake a cake, a carrot cake.

Ingredients (Cake)

2 cups flour

2 cups sugar

1 ½ cups oil

2 tsp baking soda

2 tsp cinnamon

1tsp salt

3 cups processed carrots

4 large eggs

½ cup raisins (optional)

1 cup nuts (optional)

Directions:

Step 1: Pre-heat oven to 350 degrees.

Step 2: Begin by adding all the dry ingredients along with the oil into a medium sized bowl. Using a whisk, mix until thoroughly combined.

Step 3: Next add each large egg one at a time.

Step 4: Once the eggs are completely mixed in, continue by adding the raisins and crushed nuts.

Step 5: Pour mixture into two circular cake pans and bake at 350 degrees for 35 min.

Step 6: When a toothpick can be inserted into the middle of both cakes without any dough being attached the cake is done. Remove from oven and allow to cool for at least 45 min. before decorating.

Ingredients (Frosting)

1 lb powdered sugar

8 oz. cream cheese

½ cup butter

1 ½ tsp. vanilla extract

Step 1: Make sure the cream cheese and butter are both at room temperature. Mix until creamy smooth.

Step 2: Gradually add powdered sugar until ingredients are completely mixed together.

Step 3: Add 1-1 ½ tsp. of vanilla extract depending on the desired consistency.

Step 4: Mix for 5-10 min., scraping the sides every 2-3 min.

Get creative in your decorating. Evenly ice the cake, covering all areas. Make sure to level your cake before decorating, and use the cake scraps for the side decorations. Crumble the leftover cake and press the crumbs along the side of the cake, making a rustic look. The top of the cake can be left as is, or it can be decorated it with little carrots. To make the carrots, use a circular tip in the icing bag and pipe out three dots sideways. As each dot forms, apply slightly more pressure than the last, creating a carrot look. Then use a leaf tip to create the carrots ruffled leaves on top.
