🇬🇷Sesame pasteli (also called pasteli σησάμι in Greek or pasteli σησαμένιο) is a traditional Greek (and Middle Eastern) treat made with just sesame seeds and honey — chewy, nutty, and naturally sweet.

Here’s how you can make 👇

Ingredients (basic version)
• 1 cup (150 g) sesame seeds
• ½ cup (170 g) honey
• (Optional) pinch of sea salt or a squeeze of lemon juice
• (Optional) chopped nuts (pistachios, almonds, walnuts even dried fruit get creative 🤓

Method
1. Toast the sesame seeds
• Place sesame seeds in a dry skillet over medium heat.
• Stir constantly for 3–5 minutes until golden and fragrant.
• Transfer immediately to a plate (so they don’t burn).
2. Heat the honey
• In a small saucepan, add honey and cook over medium-low heat.
• Let it bubble gently for about 5 minutes until it thickens slightly.
• To test: drop a bit into cold water — if it holds shape, it’s ready.
3. Combine
• Stir toasted sesame seeds (and nuts if using) into the honey.
• Mix quickly until evenly coated.
4. Shape the pasteli
• Line a tray with parchment paper and lightly oil it.
• Spread the mixture evenly (about ½ cm thick).
• Place another parchment sheet on top and use a rolling pin to flatten smoothly.
5. Cut and cool
• While still warm, cut into squares or bars with a sharp knife.
• Let cool completely until firm

Tips
• For a crisp pasteli, cook the honey a bit longer so it hardens more.
• For a chewy pasteli, remove the honey earlier.
• Store wrapped in parchment inside an airtight container at room temp (lasts a couple of weeks)
