Thai Peanut Chicken Bowls 🍋🟩🍜🌿
2-4 Chicken breasts cut into strips
1 package rice noodles (linguine style works best)
Cilantro
Red bell pepper
Carrots
Cucumber
Green onion
Peanut sauce:
1/2 peanut butter
3 T soy sauce
2 T maple syrup
1 T rice vinegar
Juice from 1 lime
Garlic
Ginger
1 t sesame oil
1 T sriracha (to taste)
Combine peanut sauce ingredients in a bowl, with garlic and grated ginger use your heart to measure. Cut chicken into strips and coat with about 3 tablespoons (T) of the prepared peanut sauce and set aside to marinate. Chop up all your veggies to garnish the bowls, you can use whatever you have but don’t skip the cilantro! Bring pot of water to a boil. Drizzle olive oil in saute pan and start cooking chicken, flip when first side is starting to turn light brown. Boil rice noodles 4-6 minutes stirring occasionally. Once everything is cooked it’s time to assemble the bowls! Start with noodles, then chicken, more peanut sauce and chopped veggies. Garnish with cilantro and chopped peanuts (I skipped this ingredient).
