Ingredients

250g semolina flour

125ml warm water

1 tbsp olive oil

Pinch of salt

Directions
Combine everything in a bowl, then knead on a floured surface until smooth. Let it rest covered for 30 minutes. Roll and cut as needed. Cook until al dente (3–5 min).

Ingredients:

5 oz tortilla chips

1/2 lb lean ground beef

1/2 cup canned black beans

1/3 cup shredded Mexican cheese

Instructions:

Ingredients:

110g powdered sugar

110g almond flour

100g egg whites

30g sugar

Food coloring (optional)

Filling:

115g butter

200g powdered sugar

1 tsp vanilla

1-2 tbsp milk

Steps:

Sift dry ingredients.

Whip egg whites, add sugar until stiff.

Gently fold in dry mix & color.

Pipe & rest for 30-60 minutes.

Bake at 300°F for 18 minutes.

Beat butter, sugar, vanilla, and milk.

Pair shells and refrigerate for 24 hrs.

Nutty Tahini White Chocolate Cookies with Honey & Sesame
A bakery-style cookie bursting with white chocolate chunks, sweetened with honey and topped with toasted sesame.

Ingredients:

115g unsalted butter (soft)

80g tahini

60g honey

100g brown sugar

1 egg

1 tsp vanilla

160g flour

1/2 tsp baking soda

1/4 tsp sea salt

100g white chocolate chunks

1.5 tbsp sesame seeds

Steps:

Whip butter, tahini, honey, and sugar until creamy.

Add egg and vanilla, mix well.

Stir in flour, soda, and salt.

Fold in white chocolate and some sesame.

Scoop onto a lined tray, sprinkle extra sesame.

Bake at 175°C for 10 mins. Let cool.

Blend with garlic, onion, tomatoes, and spices.

Sear the beef, then slow cook with sauce and bay leaves for 3–4 hours.

Shred meat, pan-fry in dipped tortillas with cheese.

Dip in hot broth for that final kick.
