Hi Keto friends! I ran 6 miles and came home hungry. I made this mish mash. Let me know what you think. I am just going to list the ingredients:
Canola oil
3 eggs
Squash
Onion
Red bell pepper
Baby Bella mushroom
Tomato
Spinach
Plated on a bed or arugula.
Miscellaneous seasoning salt pepper sazon Caliente and garlic powder

Oh my goodness!! My first time making the “McGriddle” chaffle, turkey bacon and egg. Y’all it was amazing!! 💙
1 egg
1/2 cup shredded mozzarella
2 tsp coconut flour or 2 tbsp almond flour
(I used the coconut flour)
1/2 tsp baking powder
1 tbsp SF maple syrup
3-5 minutes in the dash waffle maker!!
Makes 2 chaffles! 5.2 net carbs

No Bake Mini Chocolate Cream Pies!
Ingredients:
Pie Filling
- 1 small package Sugar Free Chocolate Fudge Pudding Mix
- 2 Cups Heavy Cream
No bake crust
- 4T almond flour
- 3T powdered Swerve
- 3T melted butter
Other ingredients
- whipped topping
- Lily’s Milk chocolate chips(optional)
Instructions:
1. Mix together pudding mix and heavy cream with a hand mixer until fluffy, set aside.
2. Mix ‘no bake crust’ ingredients together and spoon mixture evenly into the bottom of 9 silicone cup cake liners.
3. Scoop pie filling on top of crust mixture and refrigerate for 2 hours.
4. Remove pies from silicone liners and top with whipped topping and chocolate chips. Enjoy!

Low Carb pizza bowls 🍕 🥣
1-2 tablespoons pizza sauce
1 cup of mozzarella cheese (or more or less)
Toppings Pepperoni , cooked hamburger, cooked Italian sausage , onion, bell peppers, black olive, banana pepper, ham, pineapple, or spinach the toppings are endless.
Use which toppings you like!
Either mix altogether or layer everything!
Top with the cheese
Bake 15-20 minutes until golden brown

Great low-carb, healthy, and simple snack I made tonight that I wanted to share.
Guac with homemade keto tortilla chips. Used almond flour and shredded mozzarella for the chips. Delicious and only 2 grams net carbs per serving. Happy with how they came out! 🥑
1 cup blanched almond flour
2 cups shredded mozzarella
Any seasonings you want
Preheat oven to 350F. Melt cheese in microwave, mix w/flour until doughy, then roll dough out to flatten. Cut dough into triangles and arrange on baking sheet lined w/parchment paper. Bake for 12-15 minutes

Cucumber Pinwheels
Ingredients
* 1 piece of lavash bread (can also use low carb tortillas)
* 1 large English cucumber
* 2oz spicy jalapeño cream cheese, at room temperature
* Everything But The Bagel Seasoning
Instructions
1. Peel and thinly slice the cucumber. Using a mandolin food slicer makes this easy! A knife works too! The thinner the better - makes for easier rolling!
2. Lay the piece of lavash bread on your workspace and spread the cream cheese evenly covering the lavash bread.
3. Next, sprinkle the Everything But The Bagel seasoning over the cream cheese then layer the cucumber slices on top.
4. Begin rolling the bread by the short end. Roll it tightly, not allowing any air gaps to form.
5. Cut the cucumber and cream cheese roll with a sharp knife into one inch pieces (wipe with a damp paper towel between cuts). Secure with a toothpick.
6. Serve the cucumber pinwheels immediately for best results, or refrigerate, for just a few hours

4 tbsp. butter (softened)
2 tbsp. granular sweetener
4 egg yolks
1 C. KETO friendly dark chocolate chips
1 C. unsweetened coconut flakes
3/4 C. roughly chopped almonds
Preheat over 350 degrees and line a baking sheet with parchment paper. In a large bowl, stir together coconut oil, butter, sweetener and egg yolks. Mix in chocolate chips, coconut and almonds.
Drop batter by spoonful unto baking sheet and bake until golden, 15 minutes.

Protein Sparing Chewy Buns🍞
Ingredients:
1 cup of protein powder (whey or plant-based)
1/2 cup of almond flour
1/2 cup of coconut flour
1/2 cup of oat flour
1 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp of salt
1 egg
1 cup of unsweetened almond milk
1 tsp of apple cider vinegar
1 tbsp of honey
1 tsp of vanilla extract
Instructions:
Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a large bowl, mix together the protein powder, almond flour, coconut flour, oat flour, baking powder, baking soda, and salt.
In a separate bowl, beat the egg, then add the almond milk, apple cider vinegar, honey, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until well combined.
Scoop spoonfuls of the batter onto the prepared baking sheet and shape into buns.
Bake for 20-25 minutes, or until the buns are golden brown and firm to the touch.
Allow the buns to cool before serving. Enjoy as a protein-packed, low-carb alternative to traditional buns.
