Low carb tortilla chip
INGREDIENTS
2 c. shredded mozzarella
1 c. almond flour
1 tsp. kosher salt
1 tsp. garlic powder
1/2 tsp. chili powder
Freshly ground black pepper
DIRECTIONS
1. Preheat oven to 350°. Line two large baking sheets with parchment paper.
2. In a microwave safe bowl, melt mozzarella, about 1 minute 30 seconds. Add almond flour, salt, garlic powder, chili powder, and a few cracks black pepper. Using your hands, knead dough a few times until a smooth ball forms.
3. Place dough between two sheets of parchment paper and roll out into a rectangle ⅛” thick. Using a knife or pizza cutter, cut dough into triangles.
4. Spread chips out on prepared baking sheets and bake until edges are golden and starting to crisp, 12 to 14 minutes.

Sheet pan dinners are my jam. I would not be successful in this lifestyle without weekly meals with a little variety. I cook 2-3 dinners on sundays to set myself up for a successful week. Since I only eat 2 meals a day this gives me flexibility with breakfast and snacks and a couple of options for dinner that I can feel good about. Sheet pan Cajun sausage shrimp with veggies.
1 pack opa jalapeño and cheddar sausage.
1.5lbs of shrimp
1 zucchini
1 yellow squash
1 red bell pepper
1 bunch of asparagus
Chop everything up put it in a big mixing bow. Drizzle with avocado oil, creole seasoning, a whole lemon, Salt and pepper to taste. In the oven at 400 for 15-20 min

Made Keto Chicken bacon ranch zucchini boats for dinner. Here’s the recipe.
Chicken Bacon Ranch Zucchini Boats
yield: 4 prep time: 10 MINUTES cook time: 24 MINUTES total time: 34 MINUTES
Ingredients
2 medium zucchini
2 cups chicken, cooked and shredded
4 slices bacon, cooked and chopped
3 ounces cream cheese
1/4 cup ranch dressing
1 tablespoon dry ranch seasoning
1 cup shredded cheddar, divided
Instructions
Preheat oven to 350 degrees
Slice the zucchini length wise and use a small spoon or teaspoon to remove the inside of the zucchini and form a "boat"
Place the hollowed zucchini in a 9x13 baking dish.
In a medium size mixing bowl combine the cooked chicken, half the cooked bacon, cream cheese, ranch dressing, ranch seasoning, and half the shredded cheddar.
Top with the remaining shredded cheddar
Bake 20-24 minutes until zucchini is fork tender.
Top with remaining cooked bacon before serving

Keto Chicken Alfredo Casserole
Ingredients:
14 ounces Cauliflower florets cut into bite-size pieces
32 ounces (2 lb.) Chicken breast
1 tsp Onion powder
1 tsp Garlic powder
1/2 tsp Salt
1/4 tsp Pepper
1 Tbsp Olive oil
2 cups Alfredo sauce
12 ounces shredded Mozzarella cheese
Directions:
1. Place cut cauliflower in a microwave safe bowl with 1 cup of water.
2. Cover with a damp paper towel and microwave on high for 5 minutes.
3. Drain cauliflower, pat dry with paper towel. Set aside.
4. Cut chicken breasts into 1-inch cubes and sprinkle with onion powder, garlic powder, salt, and pepper.
5. In a skillet over medium-high heat, add olive oil and cubed chicken. Cook for approximately 10 minutes, or until chicken is cooked through. Set aside.
6. Preheat oven to 350 degrees
7. In a small pot, heat alfredo sauce over medium-low heat. When it is hot, add 3 ounces of mozzarella cheese (about 1 cup) to the sauce and stir until it is melted and the sauce is smooth.
8. Prepare a 13x9 inch casserole dish by spraying it with non-stick spray, then spread 1/2 cup of alfredo sauce on the bottom of dish.
9. Next add half of the cauliflower to the dish making a layer of it on the bottom.
10. Top with half of the cooked chicken. Let the chicken fill in the spaces between the cauliflower to fill the dish.
11. Pour 3/4 cup of alfredo sauce over the cauliflower and chicken.
12. Sprinkle shredded Mozzarella cheese on top.
13. Repeat steps using the remaining cauliflower and chicken to make a layer, followed by the remaining alfredo sauce, and top with the last of the mozzarella cheese.
14. Place in oven and bake for 30 minutes, or until the casserole is warmed through and the cheese is fully melted.
