We aren't influencers or health coaches, but I did make 2 cookbooks by request of our viewers. Ryan Lum and Anji Bee are a mid-50s So Cal couple who have created 1000+ YouTube videos since launching the Happy Healthy Vegan channel in 2013. Ryan wields logic and science to debunk anti-vegan rhetoric spread by mass media, while Anji creates lifestyle vlogs and healthy recipes. Together they demonstr

Never shared my fave pix from our anniversary date at DCA on D23 Day last month. We did eight different photoshoots with the Disneyland photographers —some that were MagicPhotos like this commemorative ballon shot with Walt & Mickey. Honestly, it was a lot of fun looking for the photographers throughout the park and seeing what kind of poses and backgrounds they work with. My selfies were getting pretty stale so getting a free photopass on our special day was really amazing! We did a couple meet and greets, too, so I could really see the difference in quality between a cast member using my phone for a quick shot vs the official photographers. Total glow-up! 🤩💖

The classic Frontierland restaurant dropped the Hacienda Salad today to bring back the old Cauliflower Taco plate. I found a photo I took of this dish in 2021 and see that it looks a bit different from the new photo provided by Disney Eats yesterday, as they don’t seem to have the tomatillo salsa anymore; the menu on the DisneyGo app just lists “housemate salsa.” My photo from 2019 is even more different, as the tacos back then were slathered in a creamy avocado salsa verde. But back then the tacos were served with tortilla chips, and we purchased sides of the rice and beans, whereas now (like in 2021), the tacos come with rice and beans. Ryan and I often stop by to grab quick plates of the rice and beans here for a cost effective and tasty snack, often pairing them with a side of corn tortillas to make tacos, sometimes splurging on some guacamole to top them off. We’ve had mixed results with the Cauliflower Tacos; when they’re cooked correctly they’re a yummy whole food plant based dish, but when they are undercooked, well… no bueno. We’ll try to check these out again next time we’re in the park! 🌮🍚🫘

Just discovered that Chef Kelly Kim w/ Seoul Sister in Parkside Market offers a Mushroom Carnitas Taco on Tuesday! We popped by this Downtown Disney District spot for their Cherry Lemonade but couldn’t resist trying this new plant based option. 🌱🌮

It’s not listed on the menu in the app or Parkside Market app, we just happened to spot the special signs they put out at the market that day. The sign didn’t include the little green V2 symbol they use to specify vegan-friendly items on their official menus, so we asked a cast member to check with the chef for us. 👍

Part of the fun of getting coffee at Mangiafoglie is discovering what new friendly pastries are on offer that day. Sylvia keeps things interesting by experimenting with new ideas throughout the seasons, bringing in seasonal ingredients, and developing different flavor profiles. Ryan has really fallen for her first savory item, the heirloom tomato tart. Isn’t it gorgeous? And sometimes when I just want a little snack with my latte I’ll sn**ch up a cookie. 🍪

Been meaning to report this for a few months… Docking Bay 7 in has removed the beloved Felucian Kefta Garden Spread from their menu. This plant based item has been there since Star Wars Galaxy’s Edge opened, originally as a lunch item, and then later as all-day menu option. It even had a special fall version that was equally delicious as the original one.

What makes the loss of our fave item even more hard to take is that the current replacement is just a chicken-less version of the Surabat Valley Greens Chicken Salad. This whole “Let Them Eat Salad” approach Disney has taken to the plant based menus this year is really ticking me off. I will NOT be trying this. Credit to Wookieepedia for the menu entry shot. 🥗

We love the bean and cheese tamales from Shane’s Tamales 💚 I think his fully loaded tamales plates are probably more popular, but we love a basic rice and beans with tamales combo best. Wish I had another combo plate right now! 😋 Oh, and in case you didn’t know, this spot near Disneyland is ALL VEGAN! 🌱
